Easy to Cook Recipes . Healthier Recipes

Celebrities love baking, or at least that’s what it looks like from their Instagram feeds. Former party lovers, whose feeds used to be filled with selfies and red carpet photos now post pics of their perfect home-made treats. And they make them pretty well. You can find various desserts, from cakes like Kelly Brook’s Easter creation to beautifully decorated cupcakes Kourtney Kardashian-style. Let’s not forget the banana bread.

Celebrity Banana Bread Recipes

I am a banana bread fan and I have made like a hundred versions of banana bread. This has become my obsession ever since I downloaded the cooking app MyGreatRecipes and discovered its banana bread recipe collection. Some time ago (I was bored a little bit) I searched the internet to find out what kind of desserts celebrities like (and bake). Turns out they do create their own sweet delights and what caught my eye in particular was Rachel Zoe’s banana bread recipe. I thought to myself “A woman with such style can’t go wrong with styling ingredients in a dessert.” That’s how I came up with the idea to recreate celebrity banana bread recipes by using the most similar banana bread option from my fav app. Here are my two best banana loafs, as made by famous people.

Rachel Zoe’s Banana Bread
The celebrity stylist and designer confessed that she loves baking, especially during the award season because it calms her nerves. I found this banana bread recipe on her Instagram feed. It is visible that it contains chocolate chips, so here is my version of it:

Ingredients:
2 cups flour
1 teaspoon baking soda
1 1/2 cup sugar
3/4 cup unsalted butter
2 eggs
4 teaspoons milk
3-4 over ripe bananas
1 cup chocolate chips

The best thing about banana bread is that all you need to do is mix the ingredients. Start by mixing the butter and sugar, then add milk, eggs and banana and at the end add the flour and baking soda. The chocolate chips are incorporated at the end and stirred manually (no mixer needed). Let the oven do the rest. Bake for about 45 minutes. Use a toothpick to check whether the loaf is done. If it comes out clean, you’re good to go.

Stanley Tucci’s Banana Bread
The actor said that this recipe is from his late wife Kate and called it Kate’s Banana Bread in her honor. He remembers how she used to make this loaf for their family and friends and everyone loved it. The recipe originally calls for Grape-nuts cereal but I made it with fresh grapes and pecans.

Ingredients
1 cup flour
1 tsp baking powder
½ cup castor sugar
pinch of salt
½ cup butter
2 eggs
1 cup mixed green and red grapes
1 cup chopped pecans

Follow the procedure laid down for the chocolate chips recipe above. Fold the grapes in the batter at the end. The grapes will look like precious gems in the baked bread. The loaf will also get extra sweetness from the grapes and they make perfect combination with any kind of nuts. Cook’s verdict: I liked both recipes, the first being a more classic version of the banana loaf, whereas the second was an opportunity for me to use grapes in a banana bread for the first time. I couldn’t decide so I let my family make the decision for me. They ruled on the Kate’s banana bread to my surprise. I expected they would be in favor of the chocolatey treat 

I must confess, I didn't make this bread :)

This is not really a recipe but it is definitely something delish which I would like to share. It is super easy to assemble and I find it very yummy. With oregano spice, I added with finely grated Parmesan Cheese on a butter spread sweet bread roll. This bread is actually an American Hot Dog bread roll. Then bake it slightly and viola!

Fasírt is Hungarian meatball. Some westerners outside Hungary called it the Hungarian Hamburger. I think Meatball describes it better. This is one recipes possible with Ground Beef too.

It is made from ground meat (pork), bread, eggs, onions and garlic and flavoured with paprika, black pepper and salt. The ingredients are usually mixed and formed into a ball that flattened a little after deep frying. It is one of the popular food served with főzelék or mashed potatoes.

Ingredients:
2 eggs
2 slices of any bread soaked in milk
1/4 tsp ground black pepper
1/2 tsp salt
3 cloves of garlic, peeled, finely chopped or grated
1/2 tsp smoked red paprika (optional)
1/2 red onion, peeled, finely chopped
1 cup of breadcrumbs
500 grams of ground beef

Directions:
1. Place everything in a large mixing bowl and mix together until everything is evenly incorporated. 2. Remember to mix in the bread very well as it should be invisible and you should not have large chunks of wet bread peaking out.
3. Form egg-sized balls and pat them flat in your palm to get a patty. Place breadcrumbs on a flat plate, put patties in the bread crumbs and coat all over.
4.  Heat oil and test it before placing patties in it to fry. If it’s hot enough, it will start frying right away.
5. Turn patties every 2-3 minutes until you get a dark brown (but not burned) outer crust all over.

This is a Milk Loaf. Some people also called it Sweet Bread. Yes, if you have been following my recipe blog, you'll remember that I've just made it a few days ago.

The thing about the Milk Loaf previously was, the braiding work was not as perfect as I would like. That was my first time baking a Milk Loaf. In fact a first time for me to handle such a soft dough since the recipe calls for one and a quarter cup of warm milk. This time around I made this 'Kalács' (its Hungarian name ;) and made sure I try the braiding with more attention.

This Sweet Bread recipe is using one teaspoon of ground cinnamon spice and the key ingredients are brown sugar, milk and eggs. Each time I have this combination - cinnamon/brown sugar/eggs when I bake, our home will be filled with such wonderful fragrance. Like a bakery! I always joke with Zsolt (my husband) that "Not Airbnb" and he gets it immediately that means 'Homemade with Love'.

I was a little worried about the fresh yeast. This time around, I added just about 2 grams lesser. The reason is, I want the bread to smell less yeasty. The proofing was about 45 minutes as before, and I set the oven to be preheated to 175°C and this beautiful Michelin looking 'baby' was baked for only 30 minutes. The adjusted recipe as follows:

INGREDIENTS

    1. 4 cups all-purpose flour
    2. 1/4 cup white sugar
    3. 1/3 cup brown sugar
    4. 1 teaspoon salt
    5. 10g fresh yeast
    6. 1 recipe - 1 egg
    7. 1 1/4 cups warm milk (45°C)
    8. 1 teaspoon vanilla extract
    9. 1/4 cup (and more for brushing) butter, melted
    10. 1 teaspoon ground cinnamon

PREPARATION

    1. Place flour, white sugar, salt, and yeast into the bowl of a stand mixer. In a bowl, whisk together egg, melted butter, warm milk, and vanilla extract; pour into the flour mixture.  Add in also cinnamon, brown sugar. Using dough hook attachment, mix on low until the flour is moistened and a dough forms, then increase speed to medium and continue kneading until smooth and elastic, 4 to 5 minutes.
    2. Place dough into a greased bowl, cover, and allow to rise in a warm place until doubled in bulk, about 1 1/2 hours.
    3. Punch down dough, turn out onto a floured work surface, and divide into 2 equal pieces. Roll each piece firmly into a log. Formed them like two overlapped 'V' and start braiding them in alternate order and pinch the ends inward 'hide the ends under' and now it should look like a braid. Place into a greased, loaf pan (in my case I just bake it on parchment paper on a baking sheet). Cover, and allow to rise in a warm place until doubled in bulk, about 45 minutes.
    4. Preheat oven to 175 °C.
    5. Brush the tops of the loaf with melted butter, then bake in preheated oven until loaf is golden brown, and sound hollow when tapped, about 30 minutes.
    6. Despite the first attempt that the braiding didn't really turn up after proofing, I still don't give up. I made it again.

HOME BAKING IS EASY: 77 Simple and Delicious Bread Recipes for Beginners. The Complete Guide to Baking Kneaded Breads.

The Bread Machine Cookbook

Made these today and planning to eat with some fresh salads and a Georgian Bread. They called it in Estonian "Gruusia Leib". პური (puri) means bread in Georgian according to Wikipedia. The large ones we found is in the shape of a canoe. This type of Shotis puri or simply shoti is a type of traditional Georgian bread. It is made with white flour and baked in a specific bakery called tone/tume/tome (the word is cognate with tandoor which is used for cooking in Southern, Central and Western Asia, as well as in the South Caucasus.) Of course these falafel can go with hummus, with pita and with rice! How do you prefer to eat falafel with?

Falafel Ingredients:

1 cup of Dried Chickpeas, soaked for 24 hours (this will yield 3 cups after they have soaked)

1 Small Red Onion, roughly chopped

3 Cloves of Garlic, minced

1 cup of Fresh Parsley

1 cup of Fresh Cilantro

1-1/2 tsp of Cumin Seeds

1-1/2 tsp of Coriander Seeds

1/4 tsp (or to taste) or Cayenne Pepper

1 Tbsp of Lemon Juice

2 Tbsp of All Purpose Flour

1/2 tsp of Baking Soda

Salt, to taste

Vegetable Oil for Frying

Preparation

1) Drain the soaked chickpeas overnight. Rinse them.

2) Working in two batches, add half of the chickpeas, parsley, garlic, onion and cilantro to a food processor and blend until you are left with a paste that’s not completely smooth but holds together when pinched, place the mixture in a bowl and repeat the process with the other half of the ingredients.

3) In a small dry skillet, add the cumin seeds and coriander seeds and toast until fragrant, then place them in a mortar and pestle and grind them until almost smooth, place in the bowl with the ground chickpea mixture along with the lemon juice, flour, baking soda and salt, mix until well combined, cover with plastic wrap and pop it in the fridge for about an hour.

4) Fill a heavy bottomed pot with some vegetable oil and allow it to come to 190°C.

5) Grab a bit of mixture and make golf ball size falafel, fry for about one minute until deeply golden brown and crispy.

6) Drain on a paper towel lined plate and repeat.

Do you really need a recipe for French Toast? Actually yes and no.
This is such a classic and easy breakfast item. I don't think I ever learn to make it from any recipe book. From young in my childhood, French toast on a Sunday breakfast is like a real treat. My uncle will normally be the one to cook it. And since he is a natural, self-taught cook, by looking at the basic steps, it was easy to whip up my own French toast. Anyway, I thought I like to highlight the recipe from Nigella Lawson and the ingredients as follows:

  • 2 large eggs
  • 4 teaspoons vanilla extract
  • ¼ cup whole milk
  • 4 slices white bread (from small loaf or 2 slices from large loaf) each slice cut in half triangles
  • 2 tablespoons butter
  • 1 drop flavourless vegetable oil for frying
  • ¼ cup superfine sugar

METHOD
Beat the eggs with the milk and vanilla in a wide, shallow bowl.
Soak the bread halves in the eggy mixture for *5 (actually 30 seconds is enough) minutes a side.
Heat the butter and oil in a frying pan, and fry the egg-soaked bread until golden and scorched in parts on both sides.

To me this is really optional: *Put the sugar on a plate and then dip the cooked bread in it until coated like a sugared doughnut.

Inspired by @maangchi Sausage Ppang recipe and all Thanks to re-create this at home for my family. I didn't add the corn and peas as in her recipe, so simply the sausage, the bread, some mozzarella cheese and ketchup sauce as toppings

Ingredients

3 tablespoons unsalted butter
½ cup milk
2 tablespoons sugar
11g fresh yeast
1 egg
¼ teaspoon salt
1¾ cup flour
5 beef hot dogs, rinsed and pat dried

For toppings
⅓ cup chopped green bell pepper
⅓ cup chopped onion
¼ cup mayonnaise
1 cup mozzarella cheese, cut into small chunks
About ⅓ cup tomato ketchup, in a squeezable bottle

For egg wash
1 egg
1/4 cup water

Directions
Make dough
Melt the butter in a pot, then remove from the heat.
Add the milk and sugar. Stir it well until the sugar is well dissolved. Add the yeast and let it sit for a few minutes until it gets foamy. Then stir in the salt and add an egg. Mix it well with a wooden spoon.
Add the flour and mix with a wooden spoon until it becomes one lump. Knead the dough by hand for a minute in the pot until it’s smooth. Cover and let it sit for about 1 hour until it doubles in size.

Wrap the dough around the sausage and use a scissors to cut it like this:

Bake and serve

Preheat your oven to 350°F.
Bake the sausage-ppang for 20 minutes until the dough turns light golden brown and fluffy. Meanwhile make the egg wash by mixing an egg and ¼ cup water in a small bowl.
Take the pan out of the oven and brush each bread with the egg wash along the outer edges.
Bake another 5 minutes and then cook under the broiler for 1 or 2 minutes to melt the cheese. Be careful it doesn’t burn!
Turn off the oven and serve right away. You can freeze any leftovers for up to 1 month.
