For Lasagna Pasta Sheets, I handmade with 3 eggs and 400g of flour, salt, one tablespoon of Olive oil and about half cup of water. The dough rested for about 30minutes before I rolled them to thin sheets with my pasta machine. This is one of the greatest investment in making a good lasagna. With a pot of hot boiling water, add a teaspoon of salt, place gently the sheets (maximum 2 at a time), for about 2 minutes to cook the lasagna pasta sheets. 

Besides, for the first time, I made the Bechamel sauce as one of the layers. Béchamel sauce, the Mother of sauces, is also known as white sauce. It is made from a white roux (butter and flour) and milk. This is the 'magic' in this Lasagna, honestly, it made the whole lot of difference in all the Lasagna. 

Today's version of lasagna is using Heinz Tomato Pasta sauce (with basil and sun-dried tomatoes), straight from the can. I lightly brown some diced onions and added the 350g of minced beef (Kodune-hakkliha from Saaremaa) pork (50%), beef (50%) Fat content less than 30 per cent. Collagen/animal protein ratio below 18. When this mixture is cooked, I sprinkled some Oregano spices and grind about 3/4 of it to smaller bits with a food processor. Then combined it back to the 1/4 for some 'texture' in the taste.

Then for the cheese layer, I used the Cheddar slices. 

So now the layering begins when all the ingredients are prepared, ready to assemble. Start with a large casserole, lightly butter the whole base or for my case, I use a baking paper to prevent any sticking. Then the first layer of pasta sheet, a layer of tomato sauce with the minced meat, third layer, the Bechamel sauce, forth layer cheese and then repeat. After about 6 repeats, you should be ready to place it to bake in a 190 deg C preheated oven for 25 minutes. Viola!

Tiramisu (Italian: Tiramisù; Veneto: Tiramesù [tirameˈsu]) is one of the most popular Italian cakes. It is made of savoiardi (or 'lady finger' biscuits) dipped in espresso or strong coffee, layered with a whipped mixture of egg yolks, mascarpone, and sugar, and topped with cocoa.

Tiramisu has become a very popular dessert. The recipe has been adapted into cakes, puddings, and other varieties of dessert.

This is the Pizza I made today for my husband. He rated it well, very well actually. So this is my very own recipe, hope you enjoy it too:

First make the pasta base :)

Ingredients: Flour, Yeast, Water, Olive Oil, Honey, Salt.

Add 5g of yeast to one teaspoon of honey, add 3 tablespoon of warm water, mix it and let it react for 10mins.

When mixture becomes fluffy, you can add 500g of flour, pinch of salt and mix them well.

When it become crumbly add water and knead it for 20mins, until it becomes the dough.

Let it rest for 30mins and punch down the puff up pasta and divide it into two parts.

Roll it down to two doughs (one for each pasta base).

Add oil and let it rest for another hour.

Flatten it with your palm or roll it to the thickness you like, adding some flour every now and then so it won't stick to your hands.

For the pasta sauce :)

Ingredients: Onions, Tomatoes puree, oregano, salt.

With two large onions, diced them and fry in olive oil til translucent.

Add one can of Pomodoro sauce (Italian tomatoes are longish types, very juicy and delicious) :)

Add half a cup of water and simmer til the fragrant of the pizza sauce fills your entire kitchen :)

Add fresh oregano and salt. Let it cool down before adding to the pizza base.

Add toppings: in this pizza photo above, Hungarian Kolbasz (Smoked sausage), Trappista cheese, cherry tomatoes and some minced garlic are added. You can top it with whatever you prefer.

There were some ham slices in this one too ;)

Bake it for 8 mins at 200 deg Celsius, when ready top it with Rucola. And enjoy!

What you need:
  • This brew method works well with any of the Segafredo Blends; for its liveliness and complexity one of the personal favorite is the medium roast VIVACE
  • Use medium ground coffee for even extraction and full body
  • Kettle
  • Any Pour-Over Dripper
  • Paper Filters
  • Scale
  • Kitchen Thermometer
  • Timer
  • Spring water (heated to 195°F to 205°F in a kettle)
  • Long spoon to stir the coffee
Brew recipes:
  • Use 25 grams of coffee and 400 grams of water for 12oz of coffee
  • Use 38 grams of coffee and 600 grams of water for 18oz of coffee
  • Use 50 grams of coffee and 800 grams of water for 24oz of coffee
Step-by-Step
  • Heat the spring water up to a temperature between 195°F to 205°F.
  • Place the paper filter inside the cone. Pour hot water through the filter to wet it, allow the water to drain completely. Drain the water and dry the cone.
  • Pre-heat your cup(s) then dry.
  • Add the ground coffee into the wet paper filter.
  • Place the cone onto the scale and tare down to zero.
  • Start the timer and slowly pour in just enough hot water to saturate the coffee bed, moving the stream in a circular pattern be sure to saturate all of the grounds.
  • Let the gases be released for the first 30 seconds, allowing the coffee to bloom.
  • Pour the remainder of the water in a slow circular motion keeping the level about 1 inch below the top of the filter.
  • According to the brew recipe selected, when you are half-way through the hot water, stir the coffee to allow for an even extraction.
  • Continue pouring the hot water to the desired amount (according to the brew recipe selected).
  • When the extraction is complete remove the paper filter and dispose of it.
  • Pour the coffee into the cup and enjoy!

Chris' World-famous Frittata Recipe 

The key to a good Frittata is leftover potatoes. Baked, fried, scalloped, whatever (I prefer baked). They should be cooked once already and placed in the fridge for at least a night. The other ingredients you can make up as you go. I recommend, as a minimum, mushrooms, fresh spinach, onions, peppers, and bacon, but tomatoes, sausage, asparagus, zucchini, and the like are all good ideas. It's best to wait until you have a fridge full of leftovers, and then to simply throw everything in. 

1. Start by sauteeing your fresh ingredients with a little oil in an oven-safe pan. I use cast-iron, and it's great. Salt, pepper, garlic, or other spices are recommended at this point. If you have raw meat like bacon, cook it separately, then chop it up and add to the veggies. 

2. Throw in your (already-cooked) potatoes, and crisp them up a bit on the outside. 
Get the pan up to medium-high. Everything should now be hot, and you should have a thin coating of oil on the pan from all this frying. This is important so the eggs don't stick, but don't overdo it or it will be greasy. 

3. As this stuff was cooking, you should have beaten 8-10 eggs in a bowl with a splash of milk. Sometimes I'll mix in a large pinch of dehydrated dill. Maybe this should have been step 1.5. Oh well, do it up, and add this mixture to your vegetables on fairly high heat. The eggs should mostly cover your pan full of tasty ingredients. 

4. Cook, covered and without stirring, until the egg mixture starts to solidify around the edges. Be careful not to burn it, but it tastes great if it gets crispy where it touches the pan. This is all very subjective. 

5. When you think it's cooked fairly well, without burning, sprinkle whatever kind of grated cheese you can come up with all over the top. Sometimes it's nice to add diced tomatoes too. Put the whole pan into the oven at about 400-450 degrees, and cook until the cheese gets bubbly and the egg cooks through. Feel free to broil it for a few minutes to brown the top. Your eggs should rise somewhat, but not like a girlie-man quiche. 

6. When it's done, sprinkle generously with more dill, let it cool and serve with toast. 

7. Proclaim, out loud, and to anyone who will listen, that this is "the best frittata this house has ever seen." As you get better with each new incarnation, and more adventurous in your ingredient selection, this statement will almost certainly be true.

Tortellini are ring-shaped pasta, sometimes also described as "navel shaped" or "belly button". They are typically stuffed with a mix of meat or cheese. Today I served it with a pasta sauce (oregano, garlic, diced onions). The freshly grated cheese topping is Parmesan Cheese. The story behind this traditional Italian cuisine is that, Venus, the goddess of love, spent a night in a local inn. While there, the innkeeper stole a peek at her through the keyhole of her door, and within seconds of seeing the enchanting goddess, he was struck by that divine degree of inspiration. He then went to his kitchen and masterminded the tortellini pasta, said to be sculpted in the shape of Venus’s navel. Everything is made from scratch. For the pasta dough: 2 cups of flour, 2 eggs, half cup of water, salt. Filling: minced pork, parmesan cheese, onion powder, garlic powder, pepper, salt.

Tagliatelle Carbonara made from scratch. So the tagliatelle pasta is made from raw ingredients like semolina flour (1 cup), flour (1 cup), 2 eggs and half cup of water and a pinch of salt. I followed the recipe of Jamie Oliver's 'master' Antonia Carluccio. The thing about this dish is the usage of Guanciale and Pecorino Romano Cheese. This is the first time I am making the creamy sauce with cheese and egg after I diced the Guanciale, sweating them with an added clove of garlic. The garlic was removed when the Guanciale turns golden brown. Quickly the boiled tagliatelle pasta is added in to combined with the heat turned off. This step is extremely crucial in order not to scrambled the egg, but rather using the technique of the addition of the pasta water to emulsify the egg, hence creating this creamy 'sauce'. Freshly cracked some pepper corn and top it off with more freshly grated Pecorino Cheese! Totally delicious! (You can't believe how wonderful the whole house smells!)

Ingredients:
  • 3 large free-range egg yolks 
  • 40 g Pecorino cheese, plus extra to serve 
  • 1 x 150 g piece of Guanciale (an Italian cured meat product prepared from pork jowl or cheeks) 
  • 200 g fresh tagliatelle 
  • 1 clove of garlic

INGREDIENTS:
3 tablespoons butter, softened
8 slices whole-grain bread
8 oz fontina or Swiss cheese, shredded (2 cups)
8 thin slices prosciutto or ham
24 fresh basil leaves
8 slices (1/4 inch) ripe tomatoes (about 2 medium)
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper

DIRECTIONS:
1. Heat griddle or 12-inch nonstick skillet over medium heat.
2. Spread butter on one side of each bread slice. Layer unbuttered side of 4 of the bread slices with 1/4 cup of the cheese, 2 slices of the prosciutto, 6 of the basil leaves and 2 of the tomato slices. Sprinkle with salt and pepper. Top each with 1/4 cup of the remaining cheese and remaining bread slice, buttered side up.
3. In hot skillet, heat sandwiches 3 to 5 minutes or until cheese is slightly melted and bread is browned. Turn sandwiches over; heat 3 to 5 minutes longer or until cheese is melted and sandwich is golden brown.

Tiramisu


One of our favorite dessert is the Tiramisu. This Italian dessert that is made by layering coffee-soaked Savoiardi, egg yolks and mascarpone cheese is simply wonderful. Mmm...even at the thought of adding amaretto liqueur and cocoa just makes me salivate now. For me, I add a dash of Palinka as a substitute for the liquor.

Directions

  1. Preheat oven to 350°F.
  2. Grease and flour 1 (8 1/2 x 4 1/4 x 2 1/2-inch) loaf pans, lining the bottom with parchment paper, if desired.
  3. Cream, using paddle attachment, butter and 2 C granulated sugar in bowl of electric mixer until light and fluffy, approximately 5 minutes.
  4. With mixer on medium speed, add eggs, 1 at a time, and the lemon zest.
  5. Sift together flour, baking powder, baking soda and salt into a bowl.
  6. In another bowl, combine 1/4 C lemon juice, buttermilk and vanilla.
  7. Alternately add flour and buttermilk mixtures to batter, beginning and ending with flour mixture.
  8. Divide batter evenly between pans, smoothing the tops.
  9. Bake 45 minutes- 1 hour, until tester comes out clean.
  10. When cakes are done, cool 10 minutes.
  11. Meanwhile, combine 1/2 C granulated sugar and 1/2 C lemon juice in small saucepan, cooking over low heat until sugar dissolves.
  12. Remove cakes from pans and set on wire rack over jelly pan (best to set upside down on rack so that syrup is spooned onto the bottom of the cake as it will absorb better than spooning over the top).
  13. Spoon lemon syrup over cakes.
  14. Allow cakes to cool completely.
  15. Glaze: Combine confectioners' sugar and lemon juice in a bowl, mixing with whisk until smooth.
  16. Pour over the tops of the cakes and allow to drizzle down the sides.
  17. Garnish with 2 lemon slices and some greens (e. g., Italian parsley or mint leaves), as desired.

I was hosting a New Year’s Eve Party at my home this year. It was the first time I hosted any kind of party, so I had a rather hard time to come up with the menu. The party was supposed to be a relaxed get-together of friends and family, not a dinner. Plus, I am not the type of cook who likes to spend a lot of time in the kitchen and experiment with complicated dishes.

So, I decided to arrange a buffet and fill it with all sorts of appetizers. The whole idea was a success. My guests were able to eat standing, without making a mess. In addition, the food was light, which is very important when there is a lot of alcohol and dancing involved.

Chicken Appetizers with a Twist

One of the recipes I used was particularly good. It was not only absolutely delicious but also very easy and simple to prepare. And that my friends, easy and simple, are the two attributes that I am looking in a recipe in order to make it a part of my regular repertoire.

What I have in mind is a Chicken Appetizer recipe, but this particular one I made was skewered chicken with an Asian twist. The twist starts developing from the marinade which involves pineapple juice, soy sauce, brown sugar, fresh garlic, and fresh grated ginger. Prepare this the night before and all you need to do the following day is to arrange the chicken slices on the skewers, sprinkle some sesame seeds, and cook on a grill!

This twist swept me away! What an easy way to turn a plain recipe into a spectacular dish! This gave me the idea to look for twists all over the world. This post is a collection of the best exotic skewered chicken appetizers, perfect for any type of gathering, from kids’ birthdays to weekend barbecues!

The Best Skewered Chicken Appetizers in the World 

Satay Chicken Appetizer Recipe

Satay originates from Indonesia, where it is a national dish. It is also popular in almost all South Asian cuisines, including the Malaysian, Thai, and the Filipino. The most authentic versions of this dish are made with coconut palm or bamboo skewers. Then they are barbecued or grilled over a charcoal or wood fire and complemented with spicy sauces seasonings.

The Thai Chicken Satay is an explosion of flavors! The marinade base is the same as the one I mentioned before, but this one is enriched with lime juice, fish sauce, sriracha, and basil. The marinade is reserved and later turned into the most amazing sauce/dip you can imagine, by simmering it and mixing it with peanut butter. Caramelized pineapple and nutty sauce; what more could you wish for from a dish?

Yakitori Chicken Appetizer Recipe

Yakitori is Japanese chicken appetizer which uses skewers called Kushi. These are usually made of bamboo or, alternatively, steel, with chicken meat or chicken offal, grilled over a charcoal fire. Yakitori is seasoned with tare sauce during cooking, but also served with tare afterward as a dip. Tare sauce is a general term for soy sauce-based dips used in Japanese cuisine.

The recipe I like combines chicken and scallions on bamboo skewers (soaked in water for 30 minutes, to prevent them from burning when on the grill). The sauce is made with ½ cup soy sauce, ½ cup mirin, ¼ cup sake, ¼ cup water, and 2 tsp. packed brown sugar. Part of the sauce is used to brush on the meat while cooking in order to caramelize. The rest is added on top of the skewers when done.

Kebab Chicken Appetizers

Kebab, also called kabob in the US, has so many different variations. What is common for all of them is that they originate from the Middle East and are generally based on grilled meat. The most popular variations also include veggies like onions, bell peppers, and tomatoes arranged together with the meat on the skewer or prepared on separate skewers.

The variation I often use is quite quick to make because the marinating process takes only an hour. The marinade is made with a range of flavors to give the exotic twist - olive oil, lemon juice, paprika, chili flakes, ground cumin seeds, minced onion, minced garlic, chopped fresh parsley leaves, and some salt. The original recipe combines chicken cubes with green and yellow bell peppers, to add some color as well as freshness, but you can basically use any vegetables you like.

For a taste closer to the original, try the Iranian Jujeh kebab, where the chicken is marinated in minced onion, lemon juice, and saffron, then grilled with tomatoes and peppers. Jujeh is very often served with lavash bread or basmati rice.

Espetada Chicken Appetizers I discovered this amazing variation of chicken appetizers when me and my husband went to Portugal for our honeymoon. The espetada is made usually of meat chunks rubbed in garlic and salt. Other variations have ‘rubs’ made of herbs. Traditionally, the skewers are made from bay leaf sticks and cooked over wood chips or hot coals. What is special about these skewers is the way they are served- the skewer hangs from a hook on a stand, which looks really interesting.

The recipe I am sharing incorporates the Portuguese chicken appetizer version with Italian pesto. Actually, the chicken is rubbed in herbs that fomr the base for pesto sauce, i.e. dried Italian herbs, mixed with garlic, salt, and pepper. The skewers are then fried on a pan greased with butter. The recipe calls for roasted veggies as well. The mix is made with mushrooms, courgettes, rocket or spinach, as well as red peppers, covered in coconut oil and roast for 35 minutes in the oven. However, the veggie combo is up to you. You can add anything you like, just don’t forget to sprinkle with the remaining herb rub before roasting. Another option is to prepare the original pesto sauce and use it for rubbing and over the veggies.

Pesto is very easy to make. Simply place the ingredients (basil, garlic, pine nuts, olive oil, salt, and pepper) in a food processor and mix until fully incorporated and smooth.

Anticucho Chicken Skewers

Antichuchos are popular and inexpensive dishes in some South American countries, very often sold as street food. The meat is usually in vinegar and spices like cumin, garlic, and ají panca (dried chili). You will find them served with a boiled potato or bread at the end of the skewer.

Originally, antichuchos are made with beef heart, but I am not eating that, so I’ ll just use chicken. The marinade is made in a form of a paste, by combining red wine vinegar, garlic, aji panca, ground cumin, ground pepper, finely chopped fresh parsley, and finely chopped fresh cilantro, all mixed with olive oil. The meat should not spend more than about half an hour in the marinade because the vinegar will dry it. Reserve the marinade to brush over the skewers during cooking. When close to done (they should be medium-cooked), cover the skewers in the marinade generously. This will flame them and give them their distinctive taste. You can place corn and potatoes on the grill to cook at the same time, also flamed using the same marinade. Serve warm!

Souvlaki Chicken Appetizer Recipe

Souvlaki, also known as Kalamaki or gyros, is the Greek version of skewered meat. The meat can be grilled with or without vegetables and, similar to the Jujeh kebab, it is served with grilled bread or fried potatoes. Very often they are deconstructed and placed in a pita wrap and complemented with various spices and sauces.

There is a great recipe called Grilled Chicken Souvlaki Salad, which combines a Greek-twist chicken appetizers recipe with another staple of the Greek cuisine – Greek salad. The chicken is marinated for minimum 30 minutes (it is best if you leave it overnight). The marinade contains olive oil, lemon juice and zest, chopped garlic, yogurt, oregano, salt, and pepper.

A standard Greek salad is made with tomatoes, cucumbers, onion, Kalamata olives, and feta cheese (crumbled or cubed). This variation also involves lettuce and a dressing. The dressing can be 1/4 cup creamy feta or dill dressing, but to remain closer to the original, cover in tzatziki sauce.

Here is a simple recipe for tzatziki: 1/2 cup plain Greek yogurt, 1/2 cup peeled and grated cucumber (drain before use), 1 clove garlic, crushed, 1 tablespoon chopped fresh dill, and 2 tablespoons lemon juice plus salt and pepper to taste. Chill in the fridge before use. A perfect dish for hot summer days!

DESCRIPTION
Serve pizza toppings swirled in a tender crescent pastry with a dipping sauce at your next get-together.

INGREDIENTS
1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls or
1 can (8 oz) Pillsbury® Crescent Recipe Creations™ refrigerated flaky dough sheet
2 tablespoons grated Parmesan cheese
1/3 cup finely chopped pepperoni (about 1 1/2 oz)
2 tablespoons finely chopped green bell pepper
1/2 cup shredded Italian cheese blend (2 oz)
1/2 cup pizza sauce (from 8-oz can)

DIRECTIONS
1. Heat oven to 350°F. Spray cookie sheet with cooking spray.
2. If using crescent rolls: Unroll dough; separate dough into 4 rectangles.
Firmly press perforations to seal. If using dough sheet: Unroll dough; cut into 4 rectangles.
3. Sprinkle Parmesan cheese, pepperoni, bell pepper and Italian cheese blend over each rectangle.
4. Starting with one short side, roll up each rectangle; press edge to seal. With serrated knife, cut each roll into 6 slices; place cut side down on cookie sheet.
5. Bake 13 to 17 minutes or until edges are golden brown. Meanwhile, heat pizza sauce. Immediately remove pinwheels from cookie sheet.
Serve warm with warm pizza sauce for dipping.

One of the reasons I love Flickr so much: my Flickr friend, Robert Barone shared a story how they made Zeppole at home to recall his memories of childhood flavours. I loved his story very much! But I was really surprised when realized that his recipe describes a traditional and very popular Hungarian pastry, moreover I used to make it rather frequently for my family, especially in February (during Carnival time) and around Easter. We call it "fánk", and this version with potatoes is called "krumplis fánk" (I could translate it something like that: fried potatoe douhgballs). Actually recipe and ingredients are just the same, and mine looks very much like Robert's Zeppole! In Hungary we used to make several versions of it: without potatoes, simply with flour, milk, eggs and yeast, or with "túró"( quark), or with ricotta, instead of potatoes. I serve it usually with cinnamon powdered sugar, or hot rum apricot jam. So my friend, Robert Barone inspired me to make "fánk" again - and my family was very grateful! (Thank you, Robert!) Luckily I took photos before I got ready with frying, because in ten minutes great great grandma's porcelain plate got empty. Potato Zeppole Ingredients: 3/4 kg flour (I used to buy it from market, from a miller) 1 kg of boiled and smashed potatoes (organic) 5 eggs (from the market, from a farm) 50 gr sugar 50 gr yeast (organic) a pinch of salt 3 cups oil (or as much as dough needs) Knead the potatoes with the flour slowly adding the eggs first and then the remaining ingredients. Once you get a solid dough, make many “zeppole” out of it and let it stand and grow for a while. Then fry them with plenty of hot olive oil. My favourite, the Ricotta Zeppole (Túrófánk) Recipe: 250 g ricotta 250 g flour 3 eggs, beaten 175 gr sour cream 1 tsp baking soda 4 tbs sugar 10 gr vanilla sugar, or vanilla extract 1 pinch of salt oil for frying Serve it with confectioner's sugar (and optionally some of cinnamon powder). Other options: serve it with hot home made apricot jam with 1 tbs rum. In a medium pot, combine the flour, baking powder, salt and sugar. Stir in the eggs, ricotta and vanilla. Mix gently over until combined. Batter will be sticky. Heat the oil in a deep pan. Dip the tablespoon into the hot oil every time you form a ball. Drop by tablespoons into the hot oil only a few at a time. Zeppole will turn over by themselves. Fry until golden brown, about 3 or 4 minutes. Drain on a paper. Serve it with confectioner's sugar (and optionally some of cinnamon powder). Other options: serve it with hot home made apricot jam with 1 tbs rum. ___________ This is the original Italian recipe from my Flickr friend Robert Barone (I've just learnt from Robert, this is the recipe of our mutual Flickr friend dark siobh@n's aunt's recipe...): Zeppole Ingredienti 3/4 di farina tipo 00 1 Kg di patate 5 uova 50 di zucchero 3 pezzi di lievito di birra da sciogliere in un po' di latte tiepido 3 tazzine d'olio d'oliva un pizzico di sale. Procedimento Si dispone la farina a fontana (tipo forma di un vulcano), aggiungervi le uova. Sbatterle aggiungendo lo zucchero, le patate ben setacciate, l'olio. Si lavora l'impasto. Si aggiunge il lievito sciolto e il pizzico di sale. Si lavora ancora la pasta e la si lascia riposare finché non cresce il volume. Dopo di che si lavora l'impasto, formando delle ciambelline e si lasciano riposare al caldo (in ambiente comunque caldo, altrimenti non la pasta non cresce) sotto un canovaccio. Una volta cresciute, si friggono in olio abbondante. Poi le si passano nello zucchero normale. Krumplis fánk: 1 kg héjában főtt krumpli 3/4 kg liszt 5 tojás 5 dkg élesztő 5 dkg cukor 3 csésze napraforgó olaj (amennyit felvesz) + a sütéshez csipet só Az élesztőt kevés tejben felfuttatjuk, a krumplit meghámozzuk, megfőzzük, még melegen áttörjük. A langyos krumplit a liszttel, a tojással, az élesztővel és a sóval bedagasztjuk, ha túl kemény, kevés langyos tejet adunk hozzá. Kis ideig kelni hagyjuk. A tésztából gömböket formálunk és bő, forró olajban kisütjük, papírtörlőre helyezve lecsöpögtetjük. Porcukorral, fahéjas cukorral,vagy pl.rumos forró baracklekvárral tálaljuk.
