The dish primarily consists of egg noodles served with wantons (dumplings usually filled with minced pork or shrimp) and can be prepared in either a soup or dry version. Here's a basic recipe for wanton noodles:

 Ingredients:

1. **For the Noodles:**

   - Egg noodles (available at Asian grocery stores)

   - A few leaves of bok choy or other greens, washed

   - Light soy sauce

   - Sesame oil

   - Oyster sauce (optional)

   - Chopped scallions or cilantro for garnish


2. **For the Wantons:**

   - Wonton wrappers

   - 200g minced pork (or a mix of pork and shrimp)

   - 1 tsp soy sauce

   - 1 tsp sesame oil

   - Pinch of salt and white pepper

   - Chopped scallions

   - A dash of Shaoxing wine (optional)

   

3. **For the Soup (if making soup version):**

   - Chicken or pork broth

   - Salt and white pepper to taste


 Instructions:

1. **Prepare the Wantons:**

   - In a mixing bowl, combine minced pork, soy sauce, sesame oil, salt, white pepper, scallions, and Shaoxing wine.

   - Mix well until the filling becomes a bit sticky.

   - Place a small amount of filling in the center of a wonton wrapper.

   - Fold the wrapper, sealing the edges to form the wonton. There are various ways to fold wontons, ranging from simple triangles to more intricate methods.

   - Repeat until all filling is used.


2. **Cooking:**

   - Boil water in a large pot.

   - Cook the wontons in boiling water until they float to the top and are fully cooked (usually 3-5 minutes).

   - Remove with a slotted spoon and set aside.

   - In the same pot of boiling water, blanch the bok choy briefly, then remove and set aside.

   - Cook the egg noodles according to package instructions, usually for just a few minutes until al dente. Drain.


3. **Assembling:**

   - **For Soup Version:** Place noodles in a bowl, add cooked wontons and bok choy. Pour hot broth over and garnish with scallions or cilantro. Adjust seasoning as needed.

   - **For Dry Version:** Toss the drained noodles with light soy sauce, sesame oil, and optional oyster sauce. Place in a bowl, top with cooked wontons and bok choy, and garnish.


Serve immediately and enjoy your homemade wanton noodles! This recipe can be modified based on regional and personal preferences. For instance, in some places, char siu (barbecued pork) slices are added as a topping, or chili paste might be used for extra kick in the dry version.

Tu Tu Kueh is a beloved childhood snack of Singaporeans and Malaysians alike. This traditional steamed rice cake is made from a mixture of rice flour and water, which is then steamed in a special mold, often made of metal or bamboo. It has a soft, fluffy texture and a sweet, fragrant aroma that is sure to tantalize your taste buds.

The cake is typically filled with a sweet filling, such as grated coconut mixed with palm sugar (gula melaka) or sometimes peanut and sugar mixture. It's a popular snack at food markets and hawker centers across Singapore and Malaysia, where it's usually served on a piece of pandan leaf or banana leaf. These leaves add a subtle fragrance to the dish that enhances its overall flavour.

If you're a fan of sweet treats, then you definitely don't want to miss out on Tu Tu Kueh. It's best enjoyed fresh and warm, straight out of the steamer, before it cools down and loses its soft texture and flavour. So, the next time you're in Singapore or Malaysia, make sure to try this delicious and traditional snack. By the way, my personal favourite is the Coconut Filling Tu Tu Kueh.


Tu Tu Kueh Recipe:

Ingredients:

  • 1 cup rice flour
  • 1/2 cup water
  • 1/2 cup coconut milk
  • 1/4 teaspoon salt
  • 1/2 cup grated coconut
  • 1/2 cup palm sugar (gula melaka), chopped or grated
  • Optional: 1/2 cup finely chopped peanuts mixed with 2 tablespoons granulated sugar
  • Pandan leaves or banana leaves, cut into small squares

Equipment:

  • Tu Tu Kueh mold or small, round-shaped molds (e.g., silicone cupcake molds)
  • Steamer or a large pot with a steaming rack
  • Mixing bowl
  • Small saucepan


Instructions:

  1. Prepare the steamer or the pot with a steaming rack by filling it with water and bringing it to a boil.

  2. In a mixing bowl, combine the rice flour, water, coconut milk, and salt. Stir well until you achieve a smooth, thick batter.

  3. In a small saucepan, mix the grated coconut and palm sugar. Cook over low heat, stirring continuously until the sugar melts and the mixture is well combined. Remove from heat and let it cool slightly. Alternatively, you can use the peanut and sugar mixture as the filling.

  4. Place a pandan or banana leaf square at the bottom of each mold. Spoon a tablespoon of the rice flour batter into the mold, making sure to cover the leaf completely.

  5. Add a heaping teaspoon of the coconut filling or peanut filling in the center of the batter. Top with another tablespoon of batter to cover the filling completely.

  6. Place the filled molds into the steamer or on the steaming rack in the pot. Cover and steam for 8-10 minutes, or until the Tu Tu Kueh is cooked through and firm to the touch.

  7. Carefully remove the Tu Tu Kueh from the steamer, using a butter knife or spatula to gently loosen the edges if necessary. Unmold onto a serving plate.

  8. Serve the Tu Tu Kueh warm, with the pandan or banana leaf still attached to the bottom. Enjoy this delicious traditional treat!

Note: Tu Tu Kueh is best enjoyed fresh and warm. If you have leftovers, store them in an airtight container in the refrigerator and reheat by steaming for a few minutes before serving.

We went to the Singapore Botanical Gardens today, and next to it is a lovely restaurant called Relish by Wild Rocket. This is where Chef Willin Low and his team serve up Modern Singaporean (Mod-Sin) cuisine with a gourmet twist. I ordered one of Relish's standout menu items: the Mushroom and Cheese Burger.

But first, let's explore the story behind Relish by Wild Rocket. Chef Willin Low's culinary journey began at his first restaurant, Wild Rocket, which opened in 2005. There, he gained a reputation for his innovative Mod-Sin cuisine, which blends traditional Singaporean flavours with modern cooking techniques. With Relish, Chef Low aimed to create a more casual dining experience without sacrificing the gourmet quality that he is known for.


Now, onto the star of the show: the Mushroom and Cheese Burger. This burger is a true masterpiece of Mod-Sin cuisine, showcasing the unique flavours and ingredients that make Relish by Wild Rocket so special. The burger features a succulent patty made from quality meats and enhanced with flavourful seasonings. But what sets it apart are the carefully chosen toppings: a variety of mushrooms prepared in different ways, perfectly paired cheeses, and creative garnishes like pickled onions and arugula.

But the Mushroom and Cheese Burger is more than just a tasty meal – it embodies the culinary philosophy that Relish by Wild Rocket is known for. The Ultimate Mushroom and Cheese Burger Recipe

Yield: 4 burgers

  • 8 oz (225g) mixed mushrooms (such as portobello, cremini, or shiitake), sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 lb (450g) ground beef (or your choice of meat)
  • Salt and pepper, to taste
  • 1 tbsp Worcestershire sauce (optional)
  • 4 slices of your preferred cheese (such as Swiss, Gouda, or blue cheese)
  • 4 burger buns (brioche, sesame, or your choice)
  • 4 leaves of lettuce (romaine, butter, or arugula)
  • 1 large tomato, sliced
  • Optional toppings: caramelized onions, avocado, or pickles
  • Optional condiments: mayonnaise, mustard, or ketchup

Instructions:

Prepare the mushroom topping: In a large skillet, heat the olive oil over medium heat. Add the garlic and cook for 1 minute, until fragrant. Add the sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until they are tender and golden brown. Season with salt and pepper, to taste. Set aside and keep warm.
Shape the burger patties: In a mixing bowl, combine the ground beef, salt, pepper, and Worcestershire sauce (if using). Mix until just combined – do not overmix. Divide the mixture into four equal portions and shape each into a burger patty.
Cook the burger patties: Preheat a grill, grill pan, or skillet over medium-high heat. Cook the patties for about 4 minutes per side, or until they reach your desired level of doneness. During the last minute of cooking, place a slice of cheese on top of each patty, allowing it to melt slightly.
Toast the buns: While the patties cook, toast the burger buns on the grill or in a toaster until lightly browned.
Assemble the burgers: Spread your choice of condiment on the bottom half of each bun. Layer a lettuce leaf, a tomato slice, the cooked burger patty with cheese, and a generous portion of the mushroom topping. Add any additional desired toppings, and then place the top half of the bun on the assembled burger.
Serve and enjoy: Serve the mushroom and cheese burgers immediately, accompanied by your favourite side dishes and beverages.
