Made this quesadilla with a store bought flour tortilla wrap. There are other options for the base wrap such as corn or wheat flour tortilla wraps too. However, today's version is just flour.  I filled it with shredded Cheddar cheese and this is just one of the most usual ways before placing it on a grill, the main idea is to melt the Cheddar cheese. You can also see that I have added red bell peppers, yellow bell peppers as well as green capsicum. All of these fresh bell peppers are best served diced. On top of lettuce (which I have shredded), topping it with Jalapeno and cherry tomatoes are a must! The mixture of spices included oregano, freshly ground pepper, some chili flakes and garlic granules. Then after assembling, they are cooked on a griddle with a dash of oil til light golden brown. This is rather a single tortilla version (as a full quesadilla involves two tortillas filled with all the toppings and fillings in between). This version is made with one tortilla wrap, folded into a half-moon shape.

Ingredients:
Large flour tortillas
2 Tablespoons olive oil
2 1/2 cups grated cheese (Lactose Free Cheddar in this case)
2 pounds skinless chicken breasts (minced)
Oregano, Salt and pepper
2 Tablespoons taco seasoning mix
1 medium onion, slices
Green bell pepper, seeded, diced
Red bell pepper, seeded, diced
Yellow bell pepper, seeded, diced
Butter for frying
Pico de Gallo (Cherry tomatoes, red onions, fresh cilantro leaves, Jalapenos, lime, salt)


Steps: Heat 1 tablespoon of the olive oil in a skillet over high heat. Sprinkle the minced chicken with salt, pepper and taco seasoning. Add the minced chicken to the skillet and saute over medium-high heat until done. About 8 minutes. Remove from the skillet and dice into cubes. Set aside.
Add the remaining 1 tablespoon olive oil to the skillet over high heat. Throw in the onions and peppers and cook until the peppers have a little 'burnt' areas. Remove and set aside.
Sizzle 1/2 tablespoon of the butter in a separate skillet or griddle over medium heat and lay a flour tortilla in the skillet. Then build the quesadillas by laying grated cheese on the bottom tortilla, and then arranging the chicken and cooked peppers. Top with a little more grated cheese and top with a second tortilla.
When the tortilla is golden on the first side, carefully flip the quesadilla to the other side, adding another 1/2 tablespoon butter to the skillet at the same time. Continue cooking until the second side is golden. Repeat with the remaining tortillas and fillings.
Cut each quesadilla into wedges and serve with Pico de Gallo.

Pico de Gallo:

Dice up equal quantities of tomatoes and onions. Roughly chop the cilantro. Slice the Jalapeno in half. With a spoon, scrape out the seeds. For more 'kick' and heat, leave the white membranes. Dice the jalapenos finely or roughly depending on your preferences. Place all in a bowl. Slice the lime in half and squeeze the juice from half the lime into the bowl. Sprinkle with salt, and stir together until combined.

Ingredients

1 pound skinless, boneless chicken breast halves - cut into chunks
2 tablespoons white wine
2 tablespoons soy sauce
2 tablespoons sesame oil, divided
2 tablespoons cornstarch, dissolved in 2 tablespoons water
1 ounce hot chile paste
1 teaspoon distilled white vinegar
2 teaspoons brown sugar
4 green onions, chopped
1 tablespoon chopped garlic
1 (8 ounce) can water chestnuts
4 ounces chopped peanuts

Directions

To Make Marinade: Combine 1 tablespoon wine, 1 tablespoon soy sauce, 1 tablespoon oil and 1 tablespoon cornstarch/water mixture and mix together.

Place chicken pieces in a glass dish or bowl and add marinade.

Toss to coat. Cover dish and place in refrigerator for about 30 minutes.

To Make Sauce: In a small bowl combine 1 tablespoon wine, 1 tablespoon soy sauce, 1 tablespoon oil, 1 tablespoon cornstarch/water mixture, chili paste, vinegar and sugar.
Mix together and add green onion, garlic, water chestnuts and peanuts. In a medium skillet, heat sauce slowly until aromatic.

Meanwhile, remove chicken from marinade and saute in a large skillet until meat is white and juices run clear.

When sauce is aromatic, add sauteed chicken to it and let simmer together until sauce thickens.

I was at a Chinese restaurant with an Italian family and a Chinese family last evening for a Chinese dinner in Tallinn Estonia. I was wondering how the name comes about. Today I found out that this dish was named about a Qing Dynasty official and governor of Sichuan Province. Based on his title Gongbao (宫保; pinyin: Gōngbǎo) which literally means 'a palace guardian'. This official is Ding Baozhen who lived from 1820 to 1886. I just think how amazing this dish has become today!

Espelette chili powder is a quintessential spice found in the Basque region of Spain. 
A good substitute is a combination of sweet and smoked paprika and cayenne pepper, which we've used here.

Basque Roast Chicken

Portion size

Ingredients
3 sweet red peppers, halved and cored
1 sweet onion, thickly sliced
1 can (28 oz/796 mL) tomatoes, drained
5 oz (142 g) cured chorizo sausages, cut in chunks
10 cloves garlic
8 small bone-in skin-on chicken pieces, (half-breasts, thighs or drumsticks)
2 tbsp (30 mL)
olive oil1-3/4 tsp (9 mL)
chopped fresh thyme
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) sweet paprika
1/2 tsp (2 mL) smoked paprika
1/4 tsp (1 mL) cayenne pepper

Preparation

On baking sheet, broil red peppers, cut side down, until blackened, about 12 minutes. Let cool enough to handle. Peel off blackened skins. (Make-ahead: Refrigerate in airtight container for up to 2 days.)
In roasting pan, combine red peppers, onion, tomatoes, chorizo and garlic.

Toss chicken with oil to coat. Combine thyme, salt, sweet and smoked paprika and cayenne pepper; rub all over chicken. Place, skin side up, on vegetable mixture in pan.

Roast in 450°F (230°C) oven, basting halfway through, until juices run clear when chicken is pierced, about 45 minutes.

These noodles are handmade with flour, salt, water and egg. It is a very easy to make noodles I must say. The thing is, I have a pasta machine that I also use it to make lasagne pasta sheets, tagliatelle pasta, udon and pasta of any kind (so to speak) :) This particular noodles is cooked with sliced chicken, braised mushrooms, lettuce and a special chilli sauce that I handcarried from Singapore. The sauce is actually a gift from my cousin and my youngest aunt. It is a special blend (also handmade with chilli, chilli padi, garlic, vinegar, parsley and some herbs). I've also added Japanese miri and soya sauce. This is how it looked, and most of all it was very delicious. Hope you like it too.

Made these Takoyaki today, but with chicken drums meat. It was very delicious!

INGREDIENTS:

Makes about 20-25 pieces
Tako (Octopus)
Green Onions
Benishoga (Red Pickled Ginger)

To Make Takoyaki Batter:
1 Medium Size Egg
1 cup Flour
1 tbsp Soy Sauce
1 tbsp Dashi
270 mL Water
1 tbsp Mirin
Pinch of Salt

Optional Toppings:
Takoyaki Sauce or Okonomiyaki Sauce
Aonori (Green Dried Seaweed)
Katsuobushi (Dried Bonito Flakes)

Procedures:

In a large bowl, mix well Dashi, eggs, soy sauce, salt, and flour with a whisk.

Heat a Takoyaki pan with oil to very hot, just until the oil begins to smoke. Use enough oil to coat the pan using a paper towel so that the batter won't stick. Then pour batter to fill the holes of the pan.

Drop octopus (chicken) pieces in the batter in each hole, and sprinkle chopped green onions and ginger all over the pan.

Cook at medium heat for 1-2 minutes and turn over using a Takoyaki turner (you can use a skewer). Cook another 3-4 minutes, turning constantly.

Place the cooked Takoyaki on a plate and pour Takoyaki sauce and mayo over them (to taste). Finish the dish by sprinkling the Takoyaki with Aonori (green dried seaweed) and Katsuobushi (dried bonito flakes).

DESCRIPTION
Flattened chicken breasts with a crunchy coating hold a delicious cheesy filling.

INGREDIENTS
1 container (8 oz) chives-and-onion cream cheese spread
3/4 teaspoon garlic powder
1/3 cup drained Old El Paso® pickled jalapeño slices (from 12-oz jar)
1/2 cup canned (drained) Green Giant® whole kernel corn
6 Old El Paso® taco shells (from 4.6-oz box),
coarsely broken 3/4 teaspoon chili powder
4 boneless skinless chicken breasts (about 1 1/4 lb)
2 tablespoons LAND O LAKES®
Unsalted or Salted Butter, melted
1/2 to 3/4 cup buttermilk
3 tablespoons honey
1 cup shredded Mexican cheese blend (4 oz)
1 2/3 cups Old El Paso® Thick 'n Chunky salsa
2/3 cup sour cream

DIRECTIONS
1.Heat oven to 350°F. In medium bowl, stir together cream cheese, garlic powder, jalapeños and corn; set aside.
2.Place broken taco shells in resealable food-storage plastic bag; seal bag. Crush taco shells with rolling pin until coarsely ground. (Or, place broken taco shells in food processor bowl with metal blade; process until coarsely ground.) Pour crumbs into shallow dish; stir in chili powder.
3.Between pieces of plastic wrap or waxed paper, place each chicken breast, smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick. Spread butter over one side of each chicken breast.
4.Place about 1/3 cup cream cheese mixture on center of buttered side of each chicken breast; roll up chicken. Pour buttermilk into shallow dish. Dip chicken rolls in buttermilk, then coat with crumb mixture. Insert toothpick to secure. Place in ungreased 8-inch square (2-quart) glass baking dish. Drizzle with honey.
5.Bake 35 to 45 minutes or until chicken is no longer pink in center. Sprinkle with Mexican cheese blend; bake 4 to 5 minutes longer until cheese is melted. Serve with salsa and sour cream. High Altitude (3500-6500 ft): Heat oven to 375°F.

It’s spring. I know I am stating the obvious but this means heating up the grill in the backyard and making some amazing chicken appetizers! Don’t you just love when you gather your friends and family for a casual hangout with chicken appetizer recipes like skewers, rolls, wraps, sliders…?

The Best Buffalo Sauce Everyone’s Favorite Chicken Appetizers

To be honest, this post is inspired by a disastrous chicken appetizer experience I had some time ago. I felt too lazy to make a wing sauce and tossed the wings directly into a hot sauce. Can you guess what happened?

Hot Sauce
Hot sauce, also known as pepper sauce or chili sauce, is made of hot peppers (usually chili) and vinegar. Some types also contain salt and some seasonings. This sauce is really hot, as the name suggests, so go easy on it, unless you want to make intensely hot chicken appetizers. It is best if you add a bit, then taste and see if you need more.

Wing Sauce
Wing sauce can be store-bought or homemade. It already contains hot sauce, usually neutralized with other ingredients like butter. If you go for this option, your chicken appetizer will be less hot, but flavorful enough. Here is a standard wing sauce recipe:

2/3 cup hot sauce
1/2 cup unsalted butter
1 1/2 tablespoons white vinegar
1/8 teaspoon garlic powder
1/4 teaspoon cayenne pepper
pinch of salt

Combine the ingredients in a pot and heat over medium heat. Bring to a simmer stirring constantly and remove when it begins to bubble. Set aside. 

So, if your chicken appetizer (wing) recipe calls for hot sauce and you decide to use wing sauce, there is no much harm done. The final product will probably be less spicy than the original. Feel free to use a larger amount of wing sauce than the recommended amount of hot sauce. 

But if the chicken appetizer recipe requires wing sauce, then think twice before tossing them in a pure hot sauce. They’ll be too hot and your mouth will burn!



The Best Varieties of Buffalo Sauce for Your Favorite Chicken Appetizer In case you have run out of red hot sauce needed for the classic Buffalo topping, make one of these quick and easy sauces for your chicken appetizer. 

Jalapeño sauce is made with green instead of red hot sauce. For extra hotness and a tangy twist, add some pickled jalapeños peppers as well.

Chicken_Marsala

We all have our culinary favorites, mainstays we've been making ever since we took up cooking in earnest. Some are dishes that are dear to our heart because they're ground zero for the start of our culinary skills. Others are ones we discovered along the way that we loved so much we latched onto them even if they arrived a little later. I've always been a fan of chicken dishes, both on the preparation as well as the savoring side of the equation.

You can bake, baste, grill, or prep your poultry in any number of combinations. Something I've always loved about chicken that red meat can't offer is how wonderfully it complements the accompanying sauce. Chicken truly takes on the character of whatever you choose to cook it with, and sometimes the deeper the immersion, the more fully the flavors emerge.

If you're looking for a method that pays deepest respect to all the complexities and character of your favorite sauce, I'd considering preparing your chicken sous vide style. A dish I've always returned to is Chicken Marsala, and it's one that perfectly takes advantage of what the sous vide method has to offer. Chicken Marsala typically combines chicken breast with a savory sauce made with a base of reduced sweet Maralas wine along with mushrooms and herbs.

One of the dish's many graces is its relatively simplicity. The flavor runs deep and rich, and the relatively simple ingredients have a chance to mesh in a way that draws them out stronger than they would ever be alone. The slow-cooking method that sous-vide provides makes the most of chicken Marsala's potential. It has the added benefit of tenderizing the chicken as well, nurturing a succulence that would otherwise be missed. Even in some of my best attempts, the chicken itself might come out tough or dry. I was hosting a New Year’s Eve Party at my home this year. It was the first time I hosted any kind of party, so I had a rather hard time to come up with the menu. The party was supposed to be a relaxed get-together of friends and family, not a dinner. Plus, I am not the type of cook who likes to spend a lot of time in the kitchen and experiment with complicated dishes.

So, I decided to arrange a buffet and fill it with all sorts of appetizers. The whole idea was a success. My guests were able to eat standing, without making a mess. In addition, the food was light, which is very important when there is a lot of alcohol and dancing involved.

Chicken Appetizers with a Twist

One of the recipes I used was particularly good. It was not only absolutely delicious but also very easy and simple to prepare. And that my friends, easy and simple, are the two attributes that I am looking in a recipe in order to make it a part of my regular repertoire.

What I have in mind is a Chicken Appetizer recipe, but this particular one I made was skewered chicken with an Asian twist. The twist starts developing from the marinade which involves pineapple juice, soy sauce, brown sugar, fresh garlic, and fresh grated ginger. Prepare this the night before and all you need to do the following day is to arrange the chicken slices on the skewers, sprinkle some sesame seeds, and cook on a grill!

This twist swept me away! What an easy way to turn a plain recipe into a spectacular dish! This gave me the idea to look for twists all over the world. This post is a collection of the best exotic skewered chicken appetizers, perfect for any type of gathering, from kids’ birthdays to weekend barbecues!

The Best Skewered Chicken Appetizers in the World 

Satay Chicken Appetizer Recipe

Satay originates from Indonesia, where it is a national dish. It is also popular in almost all South Asian cuisines, including the Malaysian, Thai, and the Filipino. The most authentic versions of this dish are made with coconut palm or bamboo skewers. Then they are barbecued or grilled over a charcoal or wood fire and complemented with spicy sauces seasonings.

The Thai Chicken Satay is an explosion of flavors! The marinade base is the same as the one I mentioned before, but this one is enriched with lime juice, fish sauce, sriracha, and basil. The marinade is reserved and later turned into the most amazing sauce/dip you can imagine, by simmering it and mixing it with peanut butter. Caramelized pineapple and nutty sauce; what more could you wish for from a dish?

Yakitori Chicken Appetizer Recipe

Yakitori is Japanese chicken appetizer which uses skewers called Kushi. These are usually made of bamboo or, alternatively, steel, with chicken meat or chicken offal, grilled over a charcoal fire. Yakitori is seasoned with tare sauce during cooking, but also served with tare afterward as a dip. Tare sauce is a general term for soy sauce-based dips used in Japanese cuisine.

The recipe I like combines chicken and scallions on bamboo skewers (soaked in water for 30 minutes, to prevent them from burning when on the grill). The sauce is made with ½ cup soy sauce, ½ cup mirin, ¼ cup sake, ¼ cup water, and 2 tsp. packed brown sugar. Part of the sauce is used to brush on the meat while cooking in order to caramelize. The rest is added on top of the skewers when done.

Kebab Chicken Appetizers

Kebab, also called kabob in the US, has so many different variations. What is common for all of them is that they originate from the Middle East and are generally based on grilled meat. The most popular variations also include veggies like onions, bell peppers, and tomatoes arranged together with the meat on the skewer or prepared on separate skewers.

The variation I often use is quite quick to make because the marinating process takes only an hour. The marinade is made with a range of flavors to give the exotic twist - olive oil, lemon juice, paprika, chili flakes, ground cumin seeds, minced onion, minced garlic, chopped fresh parsley leaves, and some salt. The original recipe combines chicken cubes with green and yellow bell peppers, to add some color as well as freshness, but you can basically use any vegetables you like.

For a taste closer to the original, try the Iranian Jujeh kebab, where the chicken is marinated in minced onion, lemon juice, and saffron, then grilled with tomatoes and peppers. Jujeh is very often served with lavash bread or basmati rice.

Espetada Chicken Appetizers I discovered this amazing variation of chicken appetizers when me and my husband went to Portugal for our honeymoon. The espetada is made usually of meat chunks rubbed in garlic and salt. Other variations have ‘rubs’ made of herbs. Traditionally, the skewers are made from bay leaf sticks and cooked over wood chips or hot coals. What is special about these skewers is the way they are served- the skewer hangs from a hook on a stand, which looks really interesting.

The recipe I am sharing incorporates the Portuguese chicken appetizer version with Italian pesto. Actually, the chicken is rubbed in herbs that fomr the base for pesto sauce, i.e. dried Italian herbs, mixed with garlic, salt, and pepper. The skewers are then fried on a pan greased with butter. The recipe calls for roasted veggies as well. The mix is made with mushrooms, courgettes, rocket or spinach, as well as red peppers, covered in coconut oil and roast for 35 minutes in the oven. However, the veggie combo is up to you. You can add anything you like, just don’t forget to sprinkle with the remaining herb rub before roasting. Another option is to prepare the original pesto sauce and use it for rubbing and over the veggies.

Pesto is very easy to make. Simply place the ingredients (basil, garlic, pine nuts, olive oil, salt, and pepper) in a food processor and mix until fully incorporated and smooth.

Anticucho Chicken Skewers

Antichuchos are popular and inexpensive dishes in some South American countries, very often sold as street food. The meat is usually in vinegar and spices like cumin, garlic, and ají panca (dried chili). You will find them served with a boiled potato or bread at the end of the skewer.

Originally, antichuchos are made with beef heart, but I am not eating that, so I’ ll just use chicken. The marinade is made in a form of a paste, by combining red wine vinegar, garlic, aji panca, ground cumin, ground pepper, finely chopped fresh parsley, and finely chopped fresh cilantro, all mixed with olive oil. The meat should not spend more than about half an hour in the marinade because the vinegar will dry it. Reserve the marinade to brush over the skewers during cooking. When close to done (they should be medium-cooked), cover the skewers in the marinade generously. This will flame them and give them their distinctive taste. You can place corn and potatoes on the grill to cook at the same time, also flamed using the same marinade. Serve warm!

Souvlaki Chicken Appetizer Recipe

Souvlaki, also known as Kalamaki or gyros, is the Greek version of skewered meat. The meat can be grilled with or without vegetables and, similar to the Jujeh kebab, it is served with grilled bread or fried potatoes. Very often they are deconstructed and placed in a pita wrap and complemented with various spices and sauces.

There is a great recipe called Grilled Chicken Souvlaki Salad, which combines a Greek-twist chicken appetizers recipe with another staple of the Greek cuisine – Greek salad. The chicken is marinated for minimum 30 minutes (it is best if you leave it overnight). The marinade contains olive oil, lemon juice and zest, chopped garlic, yogurt, oregano, salt, and pepper.

A standard Greek salad is made with tomatoes, cucumbers, onion, Kalamata olives, and feta cheese (crumbled or cubed). This variation also involves lettuce and a dressing. The dressing can be 1/4 cup creamy feta or dill dressing, but to remain closer to the original, cover in tzatziki sauce.

Here is a simple recipe for tzatziki: 1/2 cup plain Greek yogurt, 1/2 cup peeled and grated cucumber (drain before use), 1 clove garlic, crushed, 1 tablespoon chopped fresh dill, and 2 tablespoons lemon juice plus salt and pepper to taste. Chill in the fridge before use. A perfect dish for hot summer days!

Biryani was brought to the Indian Subcontinent by Muslim travelers and merchants. Local variants of this dish are not only popular in South Asia but also in Arabia and within various South Asian communities in Western countries.

Malaysian Biryani Recipe
Ingredients:-
1 Chicken buillion
1 clove garlic
5 cm piece ginger
1 tbsp poppy seed
10 cashew nuts
10 almonds
4 tbsp butter
5 cloves
5 cm cinnamon stick
1 cup Onion (chopped)
1 tsp curry powder
1 tsp tumeric powder
1 can of coconut milk
2 cup rice




1. Mix Chicken buillion with 2 tbsp of warm water.
2. Grind together garlic, ginger, poppy seed, cachew nuts, and almonds. Heat butter and fry cloves, and cinnamon until fragrance.
3. Then add in the grinded ingredients, curry powder, tumeric powder and chopped onions.
4. Mix the ingredient well, and then stir in the Chicken buillion and salt to taste.
5. Stir to mix and cook covered at mediem heat for 10 minutes.
6. Add in coconut milk. Mix until mixture is well blended.
7. Add in the washed rice and cook it.
8. Make sure that the rice fully absorbs the gravy, and cook rice at low heat.

Chicken Tandoori is a highly popular Indian dish consisting of roasted chicken, yogurt, and spices.

The chicken is marinated in yogurt and seasoned with tandoori masala. It is moderately hot, but the heat is reduced in most Western nations. Cayenne pepper, red chili powder or kashmiri red chilli powder is used to give it a fiery red hue. A higher amount of Turmeric produces an orange colour. In some modern versions, both red and yellow food colourings are used. It is traditionally cooked at high temperatures in a tandoor (clay oven), but can also be prepared on a traditional grill.

Bombay Chicken Masala ஞ

The spices: -
Coriander,
Dried Plums,
Red Chilli,
Fennel,
Mango,
Cassia,
musk melon,
Turmeric,
Cumin,
Cloves,
Cardamon Amomum seeds,
Garlic,
Black Pepper,
Green Cardamom,
Nutmeg mace,
salt.

Basmati rice is best or use Jasmine rice as substitute.

1/2 kg of Chicken breast meat, cubed
Marinate chicken with a mix of garlic-ginger, salt, yogurt & lemon juice.
4 onions, diced
4 peeled potatoes, boiled & diced.
2 tomatoes

Heat oil, fry onions till golden brown, add potatoes, tomatoes.
Add chicken and water, cover and simmer for 20mins, add salt.

Cook the rice till half the water remains and place rice in layers with meat mix in between.

Let the rice simmer till fully cooked.

Serve with natural yogurt :)
