Apple-Raspberry Pie Recipe
An Apple-Raspberry Pie combines the classic, comforting flavors of juicy apples with the zesty, vibrant kick of raspberries, all encased in a flaky, golden crust. The sweetness of the apples blends harmoniously with the slight tartness of the raspberries, creating a delightful symphony of flavors that dance on the palate. To start, choose a mix of sweet and tart apples, such as Honeycrisp and Granny Smith, ensuring a balanced taste. The raspberries add a burst of freshness, while a sprinkle of sugar and a dash of cinnamon enhance the fruits' natural flavors. For the crust, you can opt for a homemade pastry dough, ensuring a buttery, tender base and top, or use store-bought crust for convenience without sacrificing flavor.

The process of making an Apple-Raspberry Pie is as heartwarming as the pie itself. Begin by peeling and slicing the apples, then gently mixing them with the raspberries, sugar, cinnamon, and a touch of flour to help absorb the juices. Lay the bottom crust in the pie dish, fill it with the fruit mixture, and then top with the second crust. You can cut slits in the top crust to create a classic lattice pattern, allowing steam to escape and adding an element of rustic charm. After baking until the crust is golden and the filling is bubbly, allow the pie to cool, letting the flavors meld together. Serve a slice of this heavenly pie with a dollop of whipped cream or a scoop of vanilla ice cream, and savor the heartwarming blend of sweet apples, tart raspberries, and flaky crust.

Raspberries and grated orange peel add a fresh twist to apple pie!

INGREDIENTS
1 box (15 oz) Pillsbury® refrigerated pie crusts, softened as directed on box
5 cups sliced peeled cooking or baking apples (3 large)
3/4 cup granulated sugar
1/4 cup cornstarch
1 teaspoon grated orange peel
1 container (6 oz) fresh raspberries (about 1 cup)
1 tablespoon cold butter or margarine, cut into small pieces
1 teaspoon granulated sugar

DIRECTIONS
1. Heat oven to 400°F. Make pie crusts as directed on box for Two-Crust Pie using 9-inch glass pie plate.
2. In large bowl, place apples, 3/4 cup sugar, the cornstarch and orange peel; toss to coat apples. Spoon 1/2 of apple mixture into crust-lined pie plate. Sprinkle evenly with raspberries. Top with remaining apple mixture. Dot with butter. Top with second crust; seal edges and flute.
3. Lightly brush crust with water; sprinkle with 1 teaspoon sugar. Cut slits in several places in top crust. Cover crust edge with strips of foil to prevent excessive browning.
4. Place pie on middle oven rack; place sheet of foil on rack below pie in case of spillover. Bake 45 to 55 minutes or until deep golden brown. Cool at least 1 hour before serving.

Bake 50 to 60 minutes.

Lately, I am into Extra Dark Chocolate of up to 70% Cocoa solids. So I started with the city we live in now, I found this Estonian branded chocolate called 'Bitter' Kalev.

Cocoa mass, fat-reduced cocoa powder, sugar, cocoa butter, butter fat (milk), emulsifier (lecithin), vanillin. Cocoa solids: 70% minimum. May contain traces of nuts, peanuts, cereals containing gluten and egg products.

They wrote that "the high cocoa content Bitter 70% represents the best qualities of dark chocolate and is loved by everyone who prefers less sweet and slightly bitter chocolate." Before this, I actually tried the 87% on my first trial of dark chocolate. It was too bitter, but I find this 70% ones more tasty and I recommend (in fact!)

I've also learned along the way that there is a process called alkalization, also known as Dutching, has negative effects on the antioxidants in dark chocolate. So do read the labels. Do you know of any dark chocolate from your country that is a good brand? Which would you recommend

Muffins

These are my very first batch of baking done in Europe. They are none the less Banana Muffins. Baking in winter time is always a challenge, let alone to say they were the first attempts. I like the texture and if I am not wrong, these muffins were not added with baking powder. The reason is, I was not able to read so well in Hungarian yet, and I think I omit the baking powder hence using only plain flour. Here is the basic muffin recipe:

2 medium eggs
125ml vegetable oil
250ml semi-skimmed milk
200g golden caster sugar
400g self-raising flour (or same quantity plain flour and 3 tsp baking powder)
1 tsp salt
100g banana (you can substitute with chocolate chips or dried fruit such as sultanas or dried cherries (optional))

I really like this recipe. This is my first 'Lattice Crust Apple Pie'. And seriously, I love the crust as it was so fresh! Totally worth it to make the crust from scratch than buying those pre-made ones from the frozen section of supermarkets. Here's the recipe:

Crust

2 cups of plain flour

1 teaspoon of salt

¾ of a stick (90 grams) butter

5 tablespoons of cold water

Milk (for brushing the crust)

Filling
80 mL or 1/3 cup of white sugar

80 mL or 1/3 cup of brown sugar

¼ teaspoon of salt

1 teaspoon cinnamon

½ teaspoon nutmeg

3 tablespoons of flour

6-8 medium-sized apples

1 teaspoon lemon juice

Instructions:
  1. Preheat oven to 200ºC
  2. Add flour, salt and butter in a large bowl, crush butter (with fork or pastry blender) until tiny balls with the flour are formed.
  3. Slowly add the cold water.
  4. Knead with floured hands and form a large dough.
  5. Half it and wrap in plastic. Place it in the refrigerator for 30 minutes.
  6. On a floured counter-top, roll the dough out to 5 cm larger in diameter than the pie pan/dish.
  7. Slowly lift the flattened dough off (with a rolling pin).
  8. Unroll over the pan gently.
  9. Fit it into the pan and press it with your fingers against all the sides of the pan. Trim off excess and overhanging edges.
  10. Place the pie shell in the refrigerator. Prepare the filling.
  11. Peel and slice the apples, chop them into 1/2 inch cubes.
  12. In a large bowl, mix both white and brown sugar, salt, lemon juice, flour, nutmeg and cinnamon. Heat with 3 cubes of butter in the microwave until volume is reduced to a third and the mixture becomes thicker.
  13. Roll out the dough on a floured surface, cut the rolled out dough into many 1'' wide strips.
  14. Remove the pie shell from the refrigerator and spread out filling.
  15. Place the pastry strips across the top of the apples in a criss-cross pattern, then weave them together to create a lattice effect.
  16. Cut off overhanging excess pastry.
  17. Press the edges down into the rim (this step is important, some of mine popped up during baking)
  18. Brush with some milk to help brown the crust. Dust with sugar.
  19. Bake at 200ºC for 15 minutes.
  20. Turn down to 190ºC for 45 minutes. (I made mine for 35minutes, so gauge this step depending on your oven)
  21. Remove from oven when top crust is golden brown. Allow pie to cool (about 45minutes).
  22. Serve. It was really delicious especially with a glass of milk :)

Cake Making is an organic and creative process. Most bakers follow time tested, effective but slow and errorprone manual methods for cake and recipe calculations. Baking also involves time consuming and complex maths. While there are many books and websites offering recipes, tutorials etc catering to the actual cake making process, there is a desperate need for an one-stop source on calculations needed in Baking.

Bakingit.com is a software website for cake makers offering comprehensive references for serving charts, portion sizes, cake cutting guides, sugar paste and ribbon quantities. We have cake calculators, which seamlessly integrate these guides into an easy to use software, which solve real world cake making calculations. These tools act as a baker’s virtual assistant and guide them in designing, calculating and stacking cakes.

Csiga is the hungarian word for 'snail'. This pastry resembles the shape of snails and that's why its name. It is a very popular breakfast or snack, be it served for tea or your afternoon refreshment :)

Ingredients:-
20g fresh yeast
500g flour
50g soft butter
300 ml lukewarm milk
1 egg yolk
4 tsp sugar plus a pinch
1 pinch of salt

4 tsp unsalted butter, melted

Chocolate filling:

4 tsp cocoa powder
8 tsp powdered sugar

Steps:
1. In small bowl, dissolve yeast in slightly warm milk with 1 teaspoon of the sugar. Let stand 5-8 minutes.

2. Combine the flour, sugar and salt.

3. Mix yeast mixture, oil (from 4 teaspoons of unsalted butter, melted) and egg yolks together lightly.

4. Knead it until smooth.

5. Cover with a cloth and let the dough rise. This takes about 40minutes.

6. When it has risen to double its original size, put it on a tabletop and roll it out.

7. Spread some butter on the dough and sprinkle with sugar and instant cocoa powder.

8. Roll the dough with the filling inside so that you get a long roll.

9. Cut in to slices. And put the slices on to a well-greased baking tin, leave it to rise again for about 15 minutes.

10. Bake the snails in preheated 200 degree C oven for about 15-20 minutes until snails get a nice golden brown colour.

Here's a site that is ALL about the different forms of the csiga that is so loved by the Hungarians, it is called 'We love Kakaos Csiga' :)
