This is savoury and only tiny bit sweet. It was part of the set offered at the Food Court at National University Hospital (NUH) in Singapore at Kent Ridge. We were there until 3am as there were no taxi to commute home in the middle of the night. Unfortunately, we had to be there as my husband was admitted to the Accident & Emergency (A&E) again.
Made this Potato Salad for the first time, which both my husband and 10-year old daughter loved. Why didn't we make this? My daughter said: "I can eat this everyday"
Well, the short answer is, I stopped cooking for a couple of months. In the recent inflation awareness in Singapore, I began to think a lot more about food waste and sustainability issues. I seriously think we need to change. We as in "all of us", each and everyone of us is responsible to make a change to this wicked problem. The action that I took was to start with my own family.
Potato Salad Recipe
Ingredients
Measure: | Ingredient: |
10 Medium-size | Potatoes |
5 Tablespoons | Mayonnaise (Kewpie Japanese mayo was used) |
1 small sprig | Spring Onion (cut and preparation) |
1 teaspoon | Salt (optional seasoning) |
1 Litre | Boiling water |
3 Medium-size | Eggs (Free-range eggs) optional to opt out if you're vegan |
Procedure
- Boil some hot water in a large pot
- Wash the potatoes, leaving the skin on and brush off the soil bits and rinse off
- Cut the potatoes into 6 or 8 pieces, so it is quicker to cook
- Add some salt into the boiling water
- Add the potatoes
- Optional: if you will be adding hard-boiled eggs to this recipe, you can add 3 eggs to this boiling water
- Turn off the heat after 20 minutes when a toothpick comes out clean, drain the potatoes and place them in a serving bowl
- Add mayonnaise, spring onion to the potatoes, (and hard boiled eggs)
- Mix them in the serving bowl
- Serve
I personally feel this tried and tested recipe is easy and good. Potatoes are a carbohydrate-rich vegetable. A medium, 5.2 ounce potato with the skin contains 26 grams of carbohydrate. Made these today, my first attempt for Burger. It was inspired by the 'House-burger' which I had on the first day when I arrived in Riga (Latvia) at a restaurant named 'Bite'. Ever since, I had been wondering how to make that meat patty, and along the way, seeking some advice from my Chef friend Rose. She suggested using bread for the meat.
For this recipe, I've used breadcrumbs. It is similar to the Swedish meatballs but this burger tasted really good. Verdict from my husband was 12! (usually the score is 10, but this exceeded the 10, that delicious!) Think the dressing played a great part of the entire burger. A little secret: I used beer of 4.2% alcoholic content. The other elements in the dressing are diced shallots, minced garlic, honey and ketchup. For assembly, I lightly crisped the burger buns, so there are slight charred at its sides, added mayonnaise, lettuce, cocktail tomatoes, the grilled meat patty, sprinkled some gouda cheese shreds, mustard (if you like) and VIOLA! :)

Potato as a side dish ~
This is the world's fourth-largest food crop, following rice, wheat and maize. Especially in western food, we choose fried potatoes or wedges as a side dish. We also make whipped potato to complement Fried Breadcrumb Chicken when it is the main course. Boiled or steamed potatoes are the least chosen despite it could be the healthiest preparation method. How do you like your potatoes done?
Preparation:
Peel and slice potatoes about 1/2 inch thick.
In a large frying pan on medium-high heat, melt butter, add olive oil.
Add sliced potatoes, cover and fry for 10 minutes. Using a spatula, turn the potatoes over so they do not break apart. If potatoes appear too dry, add some additional butter.
If you want to have a flavour like that of McDonald's, simply add a quarter of a cube of bouillon in the oil and continue to fry with cover removed for another 5 minutes or until potatoes begin to turn slightly golden brown; turning occasionally.
Serve hot with your meal.
