Easy to Cook Recipes . Healthier Recipes



One of my favorite Hungarian snacks is the Palacsinta or Pancakes in Hungarian style. Its ingredients are eggs, flour, milk & water. It is absolutely easy to make! I just love it with Nutella :) Sometimes I go for the Hungarian cottage cheese filling too :) It smells great especially with some fresh lemon juice on the cottage cheese. The key difference of these Palacsinta to the American pancakes is that you've got to make it very very thin :)

Ingredients
1 egg
1 cup all-purpose flour
1/2 cup milk
Pinch salt
1 cup carbonated mineral water
Oil for cooking pancakes

Directions
Mix eggs, flour, milk, and salt to make a smooth pancake batter. Let the batter rest for 1 hour.

Stir in the carbonated water at the last moment, just before cooking the pancakes.

Heat an 8-inch frying pan. When the pan is hot, add 1/4 teaspoon oil. Swirl to cover the bottom of the pan.

Pour a ladle of the batter into the pan and gently tip and twist the pan so that the batter THINLY covers the entire bottom of the pan. When the top of the batter bubbles, turn the pancake over and cook for 4 or 5 seconds longer. Remove the pancake. Continue until the batter is all cooked; add a little oil before cooking each pancake.

Serve by spreading your favorite fruit jam, cocoa mix, Nutella, cottage cheese with drops of lemon juice or any of your favorite filling and roll up the pancake, serve with fresh berries.

So much gratitude to host a housewarming party in Singapore in our new home. This is a 52-Pancakes Cake Party. We invited Chris and Cassandra's family over for this special occasion. In one way, we are celebrating a friendship of "32 years" as I have known Chris for so many years! That's right, 32 years. It is not a short time, neither is it a long time, but enough to say the least we maintained our friendship very well after all these years. The recipe for thin style pancakes made in the Hungarian way is here:

Ingredients
12 eggs
1 1/2 cups all-purpose flour
4 cups milk
Pinch salt

If the title got you intrigued into reading this text, then yaaay me! I thought the other day that a list of my favorite pancakes that follows the alphabetical order. Almost all of the recipes mentioned here come from the greatest collection of pancakes in the world the Best American Pancake Recipes – Quick, Easy and Delicious - MyGreatRecipes. I love the list so much that I have printed it out and put it on the fridge. It all turned out into a pretty fun game the randomly choose the pancake recipe for the day with your eyes closed. Wherever the finger stops that’s the recipe I am going for that day.

# 1 Pancake Recipes from MyGreatRecipes

Since I love order, I had to put some order into this list as well. So for that purpose, I have grouped the pancake recipes into 5 groups each containing 5 recipes, with the exception of the last one, of course, since our alphabet contains 26 letters . So, without any further ado, here you have them:

Apple - these pancakes are great not only because they are tasty, but also for all of the health benefits that apples can provide us with. Not to mention that you can use grated, sliced or even apple rings dipped in the batter.

Banana - who said bananas were only reserved for banana bread, go ahead and try one of the many banana pancake recipes and get your potassium levels up!

Carrot - if you love carrot cake then you will surely love the recipe for the carrot cake pancakes. I mean what’s there not to love? A scrumptious bite of a well-loved dessert turned into a pancake!

Dutch Baby - the Dutch baby is a must try recipe! So easy and quick, and the result is so deliciously crispy on the edges and tender in the middle that you will want to prepare these every day! You can serve them with all sorts of fruits and berries, as well as with maple syrup, honey, and butter.
Eggless - go for one of the recipes that make use of flaxseed eggs. The recipe for these is simple: just add a tablespoon of flaxseed and the same amount of water, whip up, put it in the fridge and in 15 minutes you have yourselves the fake egg for your eggless pancakes.

# 2 Pancake Recipes
Flourless - just like there are eggless pancakes, there are also the flourless ones. In fact, flour can be replaced by bananas and the result will be just as scrumptious!

Grain - the three grain pancakes from MyGreatRecipes are a must try!

Healthy - make any regular pancake recipe healthier by simply replacing all-purpose flour with whole wheat or almond and coconut flour and swapping dairy milk for one of the vegan versions.

Individual - the most convenient way of eating pancakes is precisely this one. Make individual puff pancakes and top each one with whatever toppings you want.

Jam - jam is always a good idea! Spread it over your pancakes, or crepes and enjoy!

# 3 Pancake Recipes

Kale - prepare yourselves some pancakes packed with green veggies (kale included), say bye-bye to refined sugar, and enjoy a satiating and scrumptious bite!

Lemon - for a vitamin C infusion and a little bit of sourness to your sweet pancakes feel free to add lemon in the 2 forms it can be added to a batter: its zest and its juice. Lemon pairs perfectly well with poppy seeds, so don’t be afraid to use them as well!

Marshmallow pancakes - give the good old s’more pancakes a go. There is nothing like a cracker crumbs pancake with marshmallow fluff on top. Yum! Nutella - now, who can resist Nutella? You can either spread it on your pancakes or even stuff them with Nutella.

Oreo - and how about crushed Oreos in the batter, in the whipped cream between each pancake, and then some more on top? Go ahead and search for the Double Stuff Oreo Pancakes.


# 4 Pancake Recipes

Peanut butter - are you in for a decadent, rich and yet healthy (ok healthier than most) pancake spread? Peanut butter is all you need! Quinoa - if you need a protein and fiber boost, you have to have a pancake recipe that calls for quinoa up your sleeve.

Rainbow - definitely the prettiest and most fun of the lot. You can make them either with food coloring or some fruit gelatin powder.

Scallion - before you make a yucky face, you should know that the recipe for the Chinese scallion pancakes is one of my personal favorites! Dip them in soy sauce and enjoy!

Tapioca flour - this flour is made of a starch extracted from the cassava root and it is great for perfecting both sweet and savory pancakes, scrumptious and good for you. How can anything beat that?

When it comes to eating breakfast, there is one thing I, and half of America, cannot go without. The fluffy, soft, round beauties that go by the name of pancakes! I think we can all agree that a morning is much more bearable with a stack of fluffiness to keep you going. Now, how about turning this breakfast favorite into a lunch favorite?

Why Pancakes for Lunch


I am not saying that pancakes should become your number one lunch dish, but they are a great change of pace from the regular lunch recipes.

Don’t let the savory part discourage you into thinking savory homemade pancakes cannot be good because believe me, they can! I wouldn’t trade my maple syrup buttermilk hotcake for anything in the world, up until I saw, and prepared these scrumptious recipes.

In case you were wondering where do I get them from, there is this new food app available, called MyGreatRecipes and it is filled with all sorts of delicious recipes, among which the ones for savory pancakes don’t fall behind.

Pancake Recipes for the Ultimate Savory Experience



When it comes to savory pancakes, there is one thing I always like adding: bacon. Either folded into the batter, or diced and used as a topping, or even sliced and fried and plated aside. The great thing about bacon is it pairs perfectly well with all sorts of herbs and vegetables. For instance, you can go about and prepare the pancakes themselves by incorporating previously cooked shallots and thyme into the batter.

But, if you are tired of the same old, same old recipes, you can go for one that is unlike any pancake recipe you have ever set to prepare. Why is this you ask? Well, because it is a Japanese recipe and the pancake batter is cabbage based! This is a great way to repurpose your leftover cabbage, and the best part is, the recipe itself doesn’t call for any particular ingredients, but you can combine them to your preference. In fact, the name Okonomiyaki means to your own taste, so you can’t go wrong, as long as you have some soy sauce to dip them in, and chopsticks to eat with.

Another one of my favorite savory pancake recipes is the one for the Boxty or the Irish pancake. The versatile ingredients complement the potato taste so well, that you will be grateful for every single bite. Again, the best part is you can experiment with the ingredients, and you can again use a leftover from the day before (mashed potatoes). Mayonnaise, sour cream and Worcestershire sauce are just a few of the condiments you can add in, and you will definitely enjoy a lunch like you have never had before. Believe me, for I should know!

Pancakes can be made with chocolate and be good for you at the same time. Just try this recipe and you’ll see what I mean. What makes them healthy is the whole wheat flour and the absence of sugar. The banana is there to replace the sugar with its natural sweetness. Try to find low-fat white chocolate chips and serve with berries (blueberries or raspberries).This is one of the best pancake recipes out there!

Ingredients
1 cup whole wheat flour
¼ teaspoon salt
2 ripe bananas
2 eggs
1/2 cup milk
1/2 cup white chocolate chips
3 tablespoons butter, for greasing
1 cup raspberries

Instructions
Mash the bananas. Whisk them together with the eggs and milk. Add the wet mix to the flour and salt. Mash the raspberries a bit and add them into the mix. At the end, add the white chocolate chips. Stir everything well, but leave a little lumpy.

Grease a non-sticking pan with some butter and heat it over medium heat. Pour about 1/4 cup of the batter on the pan for each pancake. Cook the pancake until bubbles appear on the surface. Turn and continue cooking for 1-2 minutes.

Serve with raspberries and white chocolate chips on top.

If you are looking for a way to make use of the leftover quinoa flour, these quinoa pancakes are just the ones for you. Healthy and easy to prepare, a combination that nothing can top! You can serve these pancakes for breakfast or as breakfast for dinner, either way you will be enjoying a delicious pancakes with heathy benefits!
Yields: 12

Ingredients:
2 cups quinoa flour
2 teaspoons of baking powder
2 tablespoons of light brown sugar
2 teaspoons of cinnamon
1 ½ cups milk
2 eggs
1 teaspoon vanilla extract
2 tablespoons canola oil, plus more for cooking

Instructions:
Whisk the quinoa flour, baking powder, brown sugar, and cinnamon together. In a separate bowl, whisk together milk, oil, eggs and vanilla extract until thoroughly combined. Pour the wet ingredients into the dry ingredients and mix until blended. Heat a large skillet or griddle over medium heat and grease them. Dispense the batter to skillet/griddle in ¼ cup scoops, and cook until golden brown, for 2-3 minutes. Turn the pancake using a spatula and cook the opposite side for another 1-2 minutes. Serve warm with syrup and feel free to top it with banana slices. Yum!

If you’ve watched the Sponge Bob, you probably remember this phrase. (I have tons of dub smash videos impersonating the sponge bob chocolate guy). Ok, maybe not something to brag with  But it is probably the best way to emphasize how much I love chocolate, (Ok the sponge bob guy is angry) I get excited by the mere mention of the word, but you get the analogy.


Chocolate Pancakes 
The internet is filled with chocolate recipes, and oftentimes when I am too tired to cook I just browse around to get some ideas for my next chocolate meal. On a late summer night I was doing my nights research when I stumbled across http://cuterecipes.com/ …Oh my God, there were so many mouthwatering recipes in one place. To be honest sometimes I get dizzy from scrolling, so I’ve decided to search meals by category, and since lately I have been hooked on pancakes, I decided to narrow my search down to pancakes. And boy was I right to do this, the best American pancake collection abounds with tasty recipes including my favorite chocolate ones!


The Chocolate Pancakes with Chocolate Sauce, Strawberries and Bananas are definitely on the top of my list (for now). What I loved was the sweetness of the chocolate that pairs perfectly together with that sweet and savory strawberry taste, and for some extra savory touch I replaced the banana for raspberries. A mouthful of happiness is what I call it! I haven’t enjoyed in a meal like this in a while.


Double Chocolate Pancakes


Double chocolate, double the trouble… Or not? Well it depends. If you are referring to my stomach ache after I’ve finished eating a dozen of these pancakes then it is a trouble….But if you were thinking of going to the trouble of making them, as in the difficulty level of preparation, you, my friends are mistaken. This recipe makes use of cake mix, so the only thing you have to do is just stir everything together, make a batch, cook it and eat some pancakes. Yes, that easy!

While at the double chocolate pancakes theme, it would be unfair if I didn’t share the next recipe with you…If you are a Reese’s enthusiast, like I am, then you will definitely love the Reese’s syrup and double chocolate pancakes recipe. Reese’s are the main star of the chocolate syrup, but you can always add some more on top, which makes this recipe, the perfect one for anyone who loves these peanut butter cups.
