Peking duck is a traditional Chinese dish that is made by roasting a whole duck over an open fire or in a wood-fired oven. The duck is first coated with a mixture of soy sauce, hoisin sauce, and five-spice powder, and then hung to dry for several hours or even days. The drying process helps to produce a crisp and flavorful skin.

To prepare Peking duck, you will need:

Ingredients:

  • 1 whole duck
  • 1 cup soy sauce
  • 1/2 cup hoisin sauce
  • 1 tablespoon five-spice powder
  • 1 cup honey

Instructions:

  1. Combine the soy sauce, hoisin sauce, and five-spice powder in a small bowl.

  2. Wash and dry the duck, then brush the mixture all over the duck, making sure to coat it evenly.

  3. Hang the duck in a cool, dry place to dry for at least 6 hours or up to 24 hours.

  4. Preheat your oven to 400°F (200°C).

  5. Place the duck on a rack in a roasting pan and roast for 1 hour.

  6. After 1 hour, brush the duck with honey and continue roasting for an additional 20-30 minutes, or until the skin is crispy and the meat is cooked through.

  7. Allow the duck to rest for a few minutes before carving and serving. Peking duck is typically served with thin, wheat-flour pancakes, scallions, and hoisin sauce.
