Char Kuey Teow is basically flat rice noodles stir-fried with shrimp, blood cockles, Chinese lap cheong (sausage), eggs, bean sprouts, and chives in a mix of soy sauce. This one in Penang has stopped adding 'blood cockles' due to its price and lack of production. In Asia, we also called it "See-hum". The animal's body is usually orange or reddish. So it is sometimes also called the Blood cockle. This is due to the presence of haemoglobin, the same substance that colours our own blood red too. Haemoglobin assists in transporting oxygen within the body and may help the clams live in the oxygen-poor habitats. So this plate doesn't have blood cockles.
