Vegetable Curry (Nonya)
Here is a recipe for a flavourful vegetable curry:
Ingredients:
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 tablespoon of ginger, minced
- 2 tablespoons of vegetable oil
- 2 tablespoons of curry powder
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1/2 teaspoon of turmeric
- 1 can of diced tomatoes
- 2 cups of mixed vegetables (such as carrots, potatoes, bell peppers, and peas)
- 1 cup of coconut milk
- Salt and pepper, to taste
- Fresh cilantro, for garnish (optional)
Instructions:
- Heat the oil in a large saucepan over medium heat.
- Add the onion, garlic, and ginger and cook until the onion is soft and translucent, about 5 minutes.
- Stir in the curry powder, cumin, coriander, and turmeric and cook for another 2 minutes.
- Add the diced tomatoes and cook for 5 minutes, until the sauce has thickened.
- Add the mixed vegetables and continue to cook for 5 minutes, until the vegetables have started to soften.
- Pour in the coconut milk and bring the mixture to a simmer.
- Reduce the heat and let the curry cook for another 10 minutes, or until the vegetables are tender.
- Season with salt and pepper to taste.
- Serve the curry over rice, garnished with fresh cilantro, if desired.
