Cordon Bleu Chicken

Cordon bleu is a dish made with chicken that has been pounded thin, rolled around a filling of ham and cheese, and then breaded and fried. The dish is named after the traditional blue ribbon worn by knights of the Order of the Holy Spirit, which was known as the "cordon bleu" in French. It is believed that the dish was created in Switzerland in the 1950s, and it has since become popular around the world.

To prepare cordon bleu, the chicken is pounded thin using a meat tenderizer or a rolling pin. It is then seasoned with salt and pepper and spread with a layer of ham and cheese. The chicken is then rolled up tightly and coated in breadcrumbs before being fried or baked until it is cooked through. The dish can be served hot, garnished with a sauce or salad, and is often served with a side of vegetables or potatoes.

Here is a recipe for Hungarian-style cordon bleu chicken:

Ingredients:

  • 4 chicken breasts, pounded thin
  • 4 slices of ham
  • 4 slices of cheese
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 1/4 cup butter
  • 2 tablespoons vegetable oil
  • salt and pepper, to taste

Instructions:

  1. Preheat your oven to 350°F (180°C).
  2. Season the chicken breasts with salt and pepper.
  3. Lay a slice of ham and a slice of cheese on top of each chicken breast.
  4. Roll up the chicken breasts tightly and secure with toothpicks.
  5. Dip the chicken in the beaten eggs, then coat in breadcrumbs.
  6. Heat the butter and oil in a large skillet over medium heat.
  7. Add the chicken to the skillet and cook until it is golden brown on all sides, about 5-7 minutes.
  8. Transfer the skillet to the oven and bake for an additional 20-25 minutes, or until the chicken is cooked through.
  9. Remove the toothpicks and serve hot, garnished with a sauce or salad if desired.

I always believed the food tastes special in the environment so if it is served in the home in Budapest or parts of Hungary, it has its special flavours flowing through in combination with the hospitality of the people who is serving this dish, and the Cucumber Salad (Urborka Salata), the appetizers, and local desserts, even the wine that is paired with it. I hope you enjoy this recipe!

Above: This was interesting and caught my attention, it is a Scientific video caught about the cordon-bleus. The courtship behavior of red-cheeked cordon-bleus may vary somewhat depending on the individual birds and their environment, but in general, male red-cheeked cordon-bleus may perform a courtship dance to attract females. This dance may include a variety of behaviors such as singing, displaying their feathers, and performing acrobatic feats such as flying in circles or hanging upside down from a perch. The male may also engage in a behavior called "tapping," in which he pecks at the female or at a nearby object to get her attention. This tapping behavior may be part of the courtship ritual and may be accompanied by other courtship behaviors such as singing and displaying.

It is worth noting that not all male red-cheeked cordon-bleus may engage in this courtship dance or tapping behavior. Some males may be more subdued in their courtship displays, or they may not exhibit any courtship behavior at all. Additionally, the specific behaviors that a male red-cheeked cordon-bleu engages in during courtship may vary depending on the individual bird and its environment.
