I've been blogging on Deelish Recipes for almost 10 years, today I realised there isn't a post on it about coffee.

I started drinking coffee since the first time I realised it helps in keeping me awake. That time, I was about 14 years old. For the crazy examination period, the extended hours needed to cram through the studies (as studying at night when everyone is sleeping helps with less distraction). I became a night owl. Not just because I personally find coffee's taste is good, I enjoy the treatment I get when I enter a Cafe or Coffee House. Those days, I like to go to the cafe on fourth storey on Boat Quay (驳船码头 in Singapore), it is a cosy cafe but now it is no longer there anymore. And we used to take long bus rides from the city to Changi, to study overnight at the Airport terminals (for the air-condition), and availability of cafes that is opened 24 hours with a quiet environment.

Fast forward 20 years on, due to my low blood pressure (health conditions), I had to resume coffee drinking. Many westerners in particular the Americans, do not think that drinking coffee is good during pregnancy. When I was pregnant with Hedi in the later part of 2011, I had super low blood pressure - partly the pregnancy. My gynaecologist said that if I don't drink at least 2 cups of coffee each day to boost up my blood pressure, he was going to prescribe Caffeine tablets.

(Scroll down to see the image) I like this coffee machine because it was one of the smallest coffee machine ever, it weighs about 3kg and and dimensions 17 x 25 x 29 cm. So when we moved to Estonia in 2013, we flew it over as well as part of our luggage, see best carry-on luggage. Hedi will be 6 years old this coming June, so this machine has been with us for more than 6 good years!

I started drinking 2 capsules of Arpeggio everyday during my first trimester of my pregnancy. I like that Arpeggio is an intense blend of Central and South American Arabicas. It comes with grilled notes alongside subtle cocoa notes and woody hints. The intensity is '9' (12 being the most intense).

In the summer of 2017, there is a new ice coffee variation 'Limited Edition' for summertime: Intenso on Ice and Leggero on ice. I prefer Intenso on Ice but now it seems fully out of stocked.

Arabica and Robusta
Two types of coffee make up 99 percent of the coffee market: Arabica (Coffea arabica) and Robusta (Coffea canephora). While the Arabica coffee plant places high demands on climate, soil and cultivation, and grows almost exclusively in high altitude regions, Robusta is much more resistant to cold and humidity. It is therefore mostly cultivated in tropical lowlands. These differences are reflected in the taste. Arabica beans have an elegant and balanced flavour. Robusta beans have a fuller and stronger taste.

What you need:
  • This brew method works well with any of the Segafredo Blends; for its liveliness and complexity one of the personal favorite is the medium roast VIVACE
  • Use medium ground coffee for even extraction and full body
  • Kettle
  • Any Pour-Over Dripper
  • Paper Filters
  • Scale
  • Kitchen Thermometer
  • Timer
  • Spring water (heated to 195°F to 205°F in a kettle)
  • Long spoon to stir the coffee
Brew recipes:
  • Use 25 grams of coffee and 400 grams of water for 12oz of coffee
  • Use 38 grams of coffee and 600 grams of water for 18oz of coffee
  • Use 50 grams of coffee and 800 grams of water for 24oz of coffee
Step-by-Step
  • Heat the spring water up to a temperature between 195°F to 205°F.
  • Place the paper filter inside the cone. Pour hot water through the filter to wet it, allow the water to drain completely. Drain the water and dry the cone.
  • Pre-heat your cup(s) then dry.
  • Add the ground coffee into the wet paper filter.
  • Place the cone onto the scale and tare down to zero.
  • Start the timer and slowly pour in just enough hot water to saturate the coffee bed, moving the stream in a circular pattern be sure to saturate all of the grounds.
  • Let the gases be released for the first 30 seconds, allowing the coffee to bloom.
  • Pour the remainder of the water in a slow circular motion keeping the level about 1 inch below the top of the filter.
  • According to the brew recipe selected, when you are half-way through the hot water, stir the coffee to allow for an even extraction.
  • Continue pouring the hot water to the desired amount (according to the brew recipe selected).
  • When the extraction is complete remove the paper filter and dispose of it.
  • Pour the coffee into the cup and enjoy!

Relishing a mug of coffee in the morning can be refreshing. Brewing the morning coffee on the coffee maker is an excellent skill. Coffee has its load of goodies for the body. The same coffee can be fatal.

Everything should always be taken in moderation. When simple things are abused, they become poisonous. Let's have a look at the advantages and the disadvantages of the morning cup of coffee.

Advantages of the Morning Coffee

Alertness

The most obvious advantage is that coffee keeps one alert. This reason is precisely why most people will not step foot outside their homes without a cup of coffee. A study by EFSA revealed that caffeine increases both sustained attention and selective attention. If you are taking that driving test and you need to keep your eyes on the road, or you need to stay awake during that boring lecture, a cup of coffee is your best bet. You are almost guaranteed of full attention.

What the caffeine does in your body is to increase adrenaline production which in turn boosts your energy levels. Caffeine causes a blockage in the receptors for adenosine. This chemical is responsible for regulating your sleep patterns.


Reduces cancer risk

Your morning cup of coffee could reduce the risk of liver cancer by half. Recent studies have linked coffee to the decrease in the progression and recurrence of prostate cancer. Caffeine works by enhancing the death of cancer cells. The result is a reduction in the progression of cancer. 

If you have a problem with caffeine, decaffeinated coffee also contains the cancer-fighting effects. Coffee contains natural anti-inflammatory and antioxidant properties. These elements act as inhibitors for the growth of cancer cells. 

The anti-cancer properties have been found in people who drank more than four cups of coffee. It is okay to partake in that cup of coffee in the morning plus much more throughout the day without any feelings of guilt.

Weight loss

Many people who struggle with weight will welcome the weight loss benefits of coffee. Caffeine stimulates the body to burn fat in the fat stores. This prompt prevents the burning of carbohydrates. Fat burning results to weight loss and the general body health.

Caffeine in coffee improves your physical performance in endurance workouts like running. A run after a hot cup of coffee in the morning could make a significant difference in your fitness journey.

Black coffee does not contain calories when the sugar and cream are left out. According to a 2012 study by Food & Function, caffeine increased thermogenesis, a process of burning calories in the body.


Disadvantages of the Morning Coffee


Acid Reflux

Have you ever experienced heartburn after taking your morning cup of coffee? This is one of the effects of coffee intake. Coffee has been found to irritate the esophageal sphincter.

This muscle is made to remain naturally tight. When coffee intake relaxes the esophageal sphincter, the stomach contents flow back up causing the acid reflux. Before you brew that morning addiction, think about the sour taste that might follow in your mouth.


HCL

Almost all morning coffee drinkers take their first cup on an empty stomach. This habit could cause severe irritation to your stomach. The stomach contains hydrochloric acid, an acid that aids in digestion. This acid is produced when food reaches the stomach.

When coffee is taken on an empty stomach, the acid is produced, ready for digestion. There is little or no digestion of coffee. The elevated levels of the acid irritate the lining of the stomach. The results are stomach ulcers, IBS, and GERD.

It is advisable to take a snack before downing that cup of coffee. The hydrochloric acid will have plenty to do with the snack.

Elevated Peristalsis

Peristalsis is the constriction and the relaxation of the intestinal muscles. These movements propel the stomach contents towards the colon, and the result is a trip to the bathroom.

The stimulation of the intestinal muscles increases with coffee intake. The result is incomplete digestion and less absorption of essential minerals in the small intestines.

The natural process of peristalsis happens when digestion is complete, and the excretion process is ready to begin. Some people have used coffee as a laxative because of the effects mentioned above. The abnormal peristalsis may result to loose stools as the colon has little time to absorb more liquid.

Coffee has great taste and smell. Weigh the advantages and the disadvantages of coffee and make a decision before you give up and toss your coffee maker in the trash. Moderate the intake of coffee is important.

If your body has rejected the morning cup of Joe, do not force it. There are other healthier options out there. Extra care should be taken by pregnant women and people under medication when taking coffee. The coffee contents could reduce the drug absorption into the body.
