This is the Layered Potato Casserole (Hungarian Rakott Krumpli) recipe which I've learned to make it from my Hungarian mother-in-law. Some families have a different version, but after you've made it the first time, you will know how you want to modify it to make it your own personal taste. It is a very delicious and hearty comfort food, a little heavy but it can last you for the entire day. This dish is essentially requiring the sour cream. In Hungary, it is called tejföl in English Smetana. As it is a dairy product that is produced by souring heavy cream, Smetana is easily found in Central and Eastern Europe. (It is not the same type of (Heinz) sour cream which you find in Singapore)
Ingredient estimated for 4 servings:
1 kg medium sized Potatoes
4 medium sized Onions
6 Eggs
300 grams Smoked Sausage with Paprika
500 ml Sour Cream
100 ml Yoghurt (Natural or Original)
3 tablespoonfuls of breadcrumbs
300 grams Smoked bacon strips
Salt
Preparation:
1. Wash the potatoes and boil them in a pot of water until soft.
2. Rinse the water away and peel off the potatoes skins.
3. Slice it and set it aside for layering when all the ingredients are ready. Pre-heat the oven to 200ºC.
4. Add salt to another pot of water and boil the eggs. Salt is to allow it to be easier to peel off the shells. Hardboiled eggs take about 11 minutes.
5. Remove the shells of the eggs and put them into the egg slicer.
6. Slice the smoked sausages, onions.
7. Mix the sour cream and yogurt.
8. Greased the baking dish or casserole including the sides.
9. Spread breadcrumbs all around the inside of the dish.
10. Lay the bacon strips.
11. Second layer the smoked sausages.
12. Third layer the onions.
13. Fourth layer the potato slices.
14. Lightly salt it and pour half the sour cream mixture.
15. Fifth layer the sliced hard-boiled eggs.
16. Repeat these steps until all the ingredients are finished. The topmost layer will be the potatoes and then finish it off with the other half of the sour cream mixture.
17. Place the entire casserole in the preheated oven.
18. Let it bake for 40 minutes.
19. When it is ready, served it and make sure you top it again with a dollop of sour cream... enjoy!
This seafood dish is one of the most popular in Singapore. Mud crabs are used. The sauce is a savoury tomato and chili-based semi-thick sauce. It is not a spicy dish so don’t be fooled by its name. The other competing version is the Black Pepper Crab. Chilli crab is one of the most satisfying dishes to eat with crusty bread or steamed buns. People also eat it with steamed white rice. Do get ready some crab crackers and wet napkins.
This is another must try when you are in Singapore, that is the Hainanese Chicken Rice. It promises you tender chicken after 2.5 hours of cooking using this special recipe and preparation. You need, 1 kg of chicken, ginger, onions for the stock. The chicken part of the meal will need 1.5kg of free range chicken. Mainly chicken but you need Shaoxing wine or Chinese cooking wine, light soy sauce, chopped garlic clove, ginger slices, chopped spring onions, sesame oil and salt. There other two other sauces to go along with this delicious chicken other than rice. Chilli sauce can be made with 10 long red chilli, garlic, ginger, lime juice & salt. While the ginger sauce with garlic, ginger, lime juice and salt. In the video at 7:06 shows this detail and you can really make a great condiment that really enhances this wonderful rice meal. Of course,the rice is no ordinary rice too. Using the reserved chicken fat, add grated ginger, finely chopped garlic cloves, pandan leaves, salt, and long-grain rice to prepare. Mofongo is a Puerto Rican dish with fried plantains as its main ingredient. Plantains are picked green and fried then mashed with salt, garlic and oil in a wooden pilón, a kitchen device also known as mortar and pestle.
This is known as 'Har Gow' where 'har' means shrimp and 'gow' means dumpling in Cantonese. This item is one of the hot favourites of many people. It is like a piece of food art. The ingredients are wheat starch, shrimp, tapioca starch, pork fat that is cooked, scallions, bamboo shoots, cornstarch, soy sauce, sesame oil, sugar as well as seasonings. The stroopwafel was first made in Gouda either during the late 18th century or the early 19th century by a baker using leftovers from the bakery, such as breadcrumbs, which were sweetened with syrup. The stiff dough for the waffles is made from flour, butter, brown sugar, yeast, milk, and eggs. Medium-sized balls of dough are put into a heated waffle iron and pressed into the required uniformly thin, round shape. After the waffle has been baked, and while it is still warm, it is split into thin layered halves. The warm filling, made from syrup, brown sugar, butter, and cinnamon, is spread between the waffle halves, gluing them together.
Ingredients: 1 tablespoon vegetable oil 1 medium onion, diced 1 lb boneless skinless chicken breasts, cut into 1cm- pieces 1 1/2 cups water or Chicken Broth 2 teaspoons lime juice 2 tablespoons Fajita Spice Mix - Medium (heat) 1/2 cup of cooked white rice 1 can (15 oz) black beans, drained, rinsed Half a Paprika (any color of your choice; I chose Orange) 6-10 Cherry Tomatoes (diced) 3-5 Leaves Lettuce (shredded or diced) 6 Large flour tortillas for burritos (8-inch) Sour cream, if desired Avocado, if desired Pinches of jalapeño spice, as personal desire and taste Directions: 1. In 10-inch skillet, heat oil over medium heat. Add diced onion, stir fry for 1 minute til translucent. 2. Add chicken; cook 8 to 10 minutes, stirring occasionally, until chicken is no longer pink in center. 3. Stir in water/chicken broth, lime juice, salsa and contents of Fajita Spice mix until blended. Stir in beans, and add cooked rice; heat to boiling. Reduce heat; cover and simmer 20 to 25 minutes. Top it with a sprinkle of mozzarella cheese (melting in a minute) 4. Meanwhile, heat tortillas (if you like crispy tortillas, otherwise just use it as it is) 5. Spoon slightly less than 1 cup chicken rice & black bean mixture down center of each warm tortilla. 6. Add your favorite toppings of salad (lettuce, tomatoes, paprika, onions, avocado) with sour cream. 7. Add more mozzarella cheese. Pinch and sprinkles of jalapeño spice as desired. 8. Fold bottom of each tortilla 1 inch over filling. 9. Fold sides in, overlapping to enclose filling. 10. Roll forward, to form a pocket over sides. Now that we are living in Estonia, we do not get to eat the traditional Hungarian dishes as much. Upon special request, I do make some Hungarian specialties to satisfy our cravings. Today, I have made the Beef Stew and this is following the Hungarian recipe. For this dish is pretty heavy, it is best to complement it with the Cucumber Salad. Cucumber Salad's recipe is completely gluten free and vegetarian, its recipe is here:
Ingredients:
2 Cucumbers, medium
2 cloves Garlic
Spices
1/2 tsp Paprika
1/4 tsp Pepper
2 tsp Salt
1 tsp Sugar
Oils & Vinegars
2 tbsp Vegetable or salad oil
1/2 cup White vinegar
Dairy
2 tbsp Sour cream
Liquids
1 cup Water
Beef Stew Ingredients:
1 kg shank
4 onions
6-8 cloves of garlic
500ml red wine
2 tomatoes
1 green pepper
1 beef stew cube
50g smoked bacon (szalonna)
2-3 tbsp ground paprika powder
2 tsp salt
1 tsp pepper
1 tsp cumin powder
3-5 bay leaves
Preparation:
Add the bacon into the pan, fry chopped onion, caramelize the onions.
Add meat when onion turns pale.
Add the salt, pepper, paprika, tomatoes, green pepper, chopped garlic and beef stew cube.
Add Red Wine and let it simmer on low heat until meat is tender.
Add the remaining paprika powder and sour cream as topping.
Serve with nokedli (dumplings) or spatzel or potatoes. It is delicious to eat with bread (baguette) too.
