This curry is designed with health in mind, focusing on ingredients that are low in sodium and rich in nutrients. It's also easy to digest, making it suitable for seniors with dietary restrictions.

Ingredients

  • 1 onion, chopped: Onions are a good source of fiber and antioxidants.

  • 3 cloves of garlic, minced: Garlic has natural anti-inflammatory properties.

  • 1 tablespoon of ginger, minced: Ginger aids digestion and reduces nausea.

  • 2 tablespoons of vegetable oil: Choose a low-sodium oil like olive or avocado oil.

  • 2 tablespoons of curry powder: Opt for a low-sodium curry powder blend.

  • 1 teaspoon of ground cumin: Cumin is rich in antioxidants and supports digestion.

  • 1 teaspoon of ground coriander: Coriander has anti-inflammatory properties.

  • 1/2 teaspoon of turmeric: Turmeric contains curcumin, which is anti-inflammatory.

  • 1 can of low-sodium diced tomatoes: Look for a brand with minimal added salt.

  • 2 cups of mixed vegetables (such as carrots, potatoes, bell peppers, and peas): These vegetables are gentle on the digestive system and suitable for a balanced diet.

  • 1 cup of low-fat coconut milk: Coconut milk adds creaminess without excessive fat.

Instructions

  1. Heat the Oil: In a large saucepan, heat the vegetable oil over medium heat.

  2. Sauté the Aromatics: Add the chopped onion, minced garlic, and minced ginger. Cook until the onion is soft and translucent, about 5 minutes.

  3. Add Spices: Stir in the curry powder, cumin, coriander, and turmeric. Cook for another 2 minutes to allow the spices to infuse.

  4. Add Diced Tomatoes: Pour in the low-sodium diced tomatoes and cook for 5 minutes, until the sauce has thickened slightly.

  5. Add Mixed Vegetables: Add the mixed vegetables and continue to cook for 5 minutes, until they start to soften.

  6. Add Coconut Milk: Pour in the low-fat coconut milk and bring the mixture to a simmer.

  7. Simmer and Season: Reduce the heat and let the curry cook for another 10 minutes, or until the vegetables are tender. Season with salt-free seasoning blends or herbs to taste.

  8. Serve: Serve the curry over low-sodium rice or with whole grain bread, garnished with fresh cilantro if desired.

It's the perfect breakfast for those seeking comfort, luxury, and a touch of innovation on their plate.


For this was my first visit to Craftsmen Coffee at Novena area in Singapore, I was immediately taken by their commitment to quality, evident in the meticulous art of their coffee brewing. The café's diverse menu caught my eye, but it was their Egg Benedict breakfast that truly stood out for me. As I settled into the warm, inviting ambiance of the outlet, with its modern interiors providing the perfect backdrop for a morning of relaxation, I appreciated the convenience of free Wi-Fi and power outlets, enhancing my experience. Craftsmen Coffee's dedication to sustainability was also apparent, from their eco-friendly practices to their support for local suppliers, making my dining choice feel both responsible and rewarding. The sense of community was palpable, with the café's vibrant atmosphere hosting a variety of events and workshops that spoke to their role as a community hub. My visit to Craftsmen Coffee was not just about enjoying a delicious Egg Benedict breakfast; it was an enriching experience that combined high-quality coffee, a commitment to the environment, and a strong sense of community, marking it as a must-visit spot in Singapore's bustling café scene.

For Lasagna Pasta Sheets, I handmade with 3 eggs and 400g of flour, salt, one tablespoon of Olive oil and about half cup of water. The dough rested for about 30minutes before I rolled them to thin sheets with my pasta machine. This is one of the greatest investment in making a good lasagna. With a pot of hot boiling water, add a teaspoon of salt, place gently the sheets (maximum 2 at a time), for about 2 minutes to cook the lasagna pasta sheets. 

Besides, for the first time, I made the Bechamel sauce as one of the layers. Béchamel sauce, the Mother of sauces, is also known as white sauce. It is made from a white roux (butter and flour) and milk. This is the 'magic' in this Lasagna, honestly, it made the whole lot of difference in all the Lasagna. 

Today's version of lasagna is using Heinz Tomato Pasta sauce (with basil and sun-dried tomatoes), straight from the can. I lightly brown some diced onions and added the 350g of minced beef (Kodune-hakkliha from Saaremaa) pork (50%), beef (50%) Fat content less than 30 per cent. Collagen/animal protein ratio below 18. When this mixture is cooked, I sprinkled some Oregano spices and grind about 3/4 of it to smaller bits with a food processor. Then combined it back to the 1/4 for some 'texture' in the taste.

Then for the cheese layer, I used the Cheddar slices. 

So now the layering begins when all the ingredients are prepared, ready to assemble. Start with a large casserole, lightly butter the whole base or for my case, I use a baking paper to prevent any sticking. Then the first layer of pasta sheet, a layer of tomato sauce with the minced meat, third layer, the Bechamel sauce, forth layer cheese and then repeat. After about 6 repeats, you should be ready to place it to bake in a 190 deg C preheated oven for 25 minutes. Viola!
